🍰 Cheesecake Obsession: Easy Recipe for 10 Servings!

Hello foodies :)🎂🍰🍋🧀!

Just popping in with a little dessert I made again after a while 😄!

Honestly I’m not really a sweets person. Like, give me spicy food any day and I’ll be the happiest person alive🌶️🥵.

Let me tell you, it’s really easy to make and turns out delicious. I’ve been kind of focused on cheesecake lately and weirdly… I cannot get enough of it! 😅

I used this recipe for the classic cheesecake from Coolinarika:

Nothing beats a cheesecake from Vincek pastry bakery (if you’re ever in Zagreb, go visit it, you’ll be amazed!) but this homemade version is actually very close. I also have to mention if you ever come across a cheesecake cocktail, try it!! It’s sour and sweet at the same time, and I’m totally addicted to it. Every time I go to a nearby bar, it’s my go to drink 🍋🍹!!

🧁 Recipe Summary (for 10 servings):

Biscuit base:

• 300 g tea biscuits

• 150 g butter (melted)

Cheese filling:

• 500 g fresh cheese (quark or cream cheese)

• 500 ml sour cream

• 5 eggs

• 5 tablespoons sugar

• 1 packet of vanilla sugar

Topping:

• 1 cup sour cream

• 1 tablespoon sugar

• Juice of half a lemon (optional, for a light tang)

🥣 Preparation:

  1. Crush the biscuits and mix with melted butter. Press into a springform pan and chill in the fridge while you prepare the filling.
  2. Mix the cheese, sour cream, eggs, sugar, and vanilla sugar until smooth and pour over the base.
  3. Bake at 180°C for about 50 minutes.
  4. After baking, mix the sour cream with sugar (and lemon juice if using) and spread over the warm cake.
  5. Let it cool completely, then refrigerate for a few hours (or overnight) before serving.

I’m honestly proud of how it turned out. I first made my first cheesecake in high school on the culinary class and a few years after here I am😄! (side note to myself, PLEASE FIND THE NOTEBOOK WITH ALL THE RECIPES WE EVER MADE IN THE COOKING CLASSSSS!!!!)

Honestly, I think I’ll caramelize lemon slices next time.. I like my cheesecake a bit more sour :).

It turned out to be really delicious, soft, aaaand while I’m writing this.. completely gone🤣!
