STEP-BY-STEP GUIDE TO PREPARING NIGERIAN-STYLE SWEET POTATO PORRIDGE WITH DRY CATFISH AND INDIAN SPINACH

In this post I will be sharing with you the process of making sweet potatoes porridge. If you recall that some days back I made a post on how I made sweet potatoes moi moi - you can check my blog to catch up in case you missed it.

Sweet potatoes can be prepared in so many ways which including boiling, frying and the two that I have mentioned earlier among others. Sweet potatoes does not only make a delicious meal but it is also know for being rich in iron, fiber and vitamins, with the addition of fish and indian spinach (efo amunatutu), it makes this recipe a mouthwatering dish that is perfect for either breakfast, lunch or dinner.

Ingredients

  • 6 sweet potatoes

  • 4-5 medium tomatoes

  • 3 dry peppers

  • 1 onion

  • 1 dry catfish

  • ⅓ cup palm oil

  • Indian spinach (efo amunatutu)

  • 3 cups Water

  • 2 seasoning cubes

  • Salt

Step by Step

  • Let's begin by prepping all our ingredients. Start by peeling the sweet potatoes and cut into small sizes. Set aside.

  • Wash your pepper, tomatoes, and onions thoroughly, then blend roughly and set aside.

  • Wash and thinly slice your indian spinach (efo amunatutu) and set aside.

  • Now that all the ingredients are set, continue by placing a pot on medium heat, add your diced sweet potatoes and pour in enough water to cover the potatoes. Allow to cook for about 10 to 15 minutes.

  • When you are sure that the potatoes are soft, pour in the blended pepper, tomatoes and onion and cover to cook for about 5 minutes. 1000170214.jpg

  • Then you can add your seasonings and the dry catfish. Add some salt to taste as well. Cover the pot for another five minutes before you pour in your palm oil and allow to simmer.

  • After about another 5 minutes, stir the pot so that it wouldn't start burning. Then use your spoon to mash some of the potatoe cubes so that it can thicken your porridge and give it some creamy feel.

  • The final step is to add your sliced Indian spinach (efo amunatutu) and allow to simmer for another 5 minutes before you turn off the heat.

  • Your sweet potatoes porridge is ready and it can be served hot.

Wow the result looks amazing I rarely cook with sweets potatoes but used this way looks really yummy 😋

It tastes as yummy as it looks. What I love about the meal is that you mash some and you leave some unmasked, the unmashed ones give you a creamy consistency that will make you ask for more.
