There are many aspects of my southern heritage I would just as soon leave buried in the swamp due to recent political hijackings, but luckily the food is not one of them. Southern cooking is innocent (even the grits!). A little greasy at times, but innocent.
So I chose as the next step on my slow cooker journey, a southern staple: Red Beans & Rice! With the help of ChatGPT I cobbled together a recipe using the ingredients left over from my debut cassoulet (meh) and fired up the Crock-Pot! Now I just need to find some corn bread and a nice merlot.
