I was so touched yesterday when I read the poem my daughter @tegoshei gave me as a Mother's Day gift. That was more than the cake she made for me.
We had a very simple celebration yesterday. My daughter baked a "Chocolate Coffee Cake" and I made a "Coffee Jelly Frosting" for the cake.
That was so delish!!😋
Here's the cake she baked. It tastes even better when we top it with the coffee jelly frosting. 😋❤
We were able to share some with our closest neighbors, too.
We ate some of the leftover cake for breakfast this morning, and we paired it with green tea.
My family always have bread for breakfast, specifically wheat bread with some spread like peanut butter, Goya chocolate spread and sometimes just cheese and eggs. Since we love to have some spread on our loaf bread so I decided to try to make my own spread.
It's "Cheesy Yema Spread". So, I wanted to show you how I made it.
INGREDIENTS:
- 2 cans of Condensed Milk
- 1 can of Evaporated Milk
- 1 packet of Creamer
- 3 tbsp of Butter
- 1 box of Eden Cheese
- 2 pcs of Egg Yolk
PREPARATION AND COOKING:
Grate the cheese
Crack two eggs and separate the yolks, then put them in a bigger bowl. Add the two cans of condensed milk and then mix them well. On the other bowl, mix the creamer and evaporated milk.
Then set them all aside. Now, let's prepare the pan or cooker.
Heat the pan and then add the butter until it’s melted.
Then add milk mixtures, (the condensed with egg yolk and the evaporated milk with creamer). Stir and mix them well.
When it gets a bit thicker, add the grated cheese and mix them well by continuing to stir. Just cook on a low heat.
And this is it... We already have our own homemade sandwich spread. I was able to make two jars of it. These were empty jars of our Goya choco spread. I washed it well, then sterilized and let it dry.
No wonder we finished the 1st jar of cheesy yema spread in just 3 days. That was really yummy.
We usually finish our sandwich spread in a week or almost two weeks. We decided that I would just make this just once a month. It's not good for our health if we eat it too much.
I'm planning to make another flavor in the future. Maybe a nutty yema spread, a coffee or a chocolate one will do, too.
This is really how my family is. We always bond over food and sometimes watch movies together at home, especially my daughter and I. My husband usually stays in our mini sari-sari store most of the time and just watches some news, sometimes reels and movies on his phone. But he is always my daughter's buddy when going out for a walk. But for foods... we almost have the same choices and taste...well, that's aside from seafood.
