RE: Homemade İskender, quite easy and affordable (Tr-En)

in Hive Türkiyelast month

and 2 packs of lamb- calf döner

Impossible to buy, honestly.

1 nice serving of Iskender from my favourite shop is 25$ with drinks and tip included.
The priciest part is the meat anyways and they carve it well.

Best way to make it at home:

making lamb- döner (kebap) seems impossible.

Another thing:

Iskender Efendi (the inventor) fascinates me (and his family).
How come there is a wiki on the dish:

https://en.wikipedia.org/wiki/%C4%B0skender_kebap

it mentions:

It is one of the most popular dishes of Turkey. It takes its name from its inventor, İskender, who lived in Bursa in the late 19th century Ottoman Empire.

But there is no wiki on Iskender Efendi (the creator) nor his family, who keeps the tradition alive?
They even raise their own stock, butcher their own lambs, to this day.

Someone could make a lot of money creating that style of restaurant (even franchize) here in Germany, or probably internationally.

25$ for Iskender hurts, but I'd pay more if the lambs were locally raised, the ingredients were carefully sourced and the whole thing was made with the proper respect and care...

(sry for the long as reply)

True but in here we are trying to be cheap as well. Of course, if I make it at home, it will be better but this is the situation for now.

I don't know who is writing these but this is not the important part I believe. Because I know that if it is done by someone else, these kind of records, the family will start to think they are the one and only entitled ones. It is a national treasure rather than just one family.

There are some places do this but I bet not much in Istanbul. Maybe a bit more rural areas.

Thank you for the precious comment!

I understand what you are saying.

But here is a spagetthi comparison again: Everybody knows Spagetthi Alfredo. Now imagine Alfredo's grandson was still making the same pasta somewhere in Rome, Italy, following his great grandfather's recipe, using the original local ingredients.
From the Alfredo-wiki:

Lelio's fame and success grew (he was knighted by the King of Italy, making him a Cavaliere dell'Ordine della Corona d'Italia)

He became a knight for cooking pasta 🤣 ONLY IN ITALY

Anyways...

I once saw a whole documentary on Iskender Efendi and the family business and they came across as quite humble, anyways.

The creator of a dish that you classify as 'national treasure' deserves their own wiki-page, I think.
