I don't like autumn. There I said it and there is no way to turn back again from it. Autumn feels like a way of that the end is starting and is getting near without any chance of going back from it. And every one repeats itself in the words that come with it as well.
'Ahhh the colors are so nice and the smell outside it so fresh'
Fresh? I call that the scent of when things are starting to decay and the irreversible process has started to the end of it's life cycle.
The contrast with how humans behave then is also really weird. People 'say' they are so rejuvenated from their summer break and are all ready to get back to work and start their normal winter ritual which will last from the upcoming months in the same cycle day after day after day and call it 'that they are so fond of habit'.
But when you are looking more closer at how they behave after summer when you were there the whole time....Well, let's say that you can see that they are run down already in two weeks again and go back in their state of over and over again.
Admitting it? Nehhhh, that will never happen. I'm just amazed on how people choose and decide to live their lives here.
Small disclaimer: This is about people who took their whole 10 kid family to Bali or so over summer time. I realize very much that not everyone has a choice on how they can decide on how to live their lives on this behalf.

Circles and circles
Nature also has everything in circles and in patterns. Trees have the rings of the years, sand on the beach goes in waves and this cool purple thing here? That is called a choggia beetroot.
Aint it amazing how nature can make these kinds of beet roots under the ground and all of this stuff is developing while you aren't even seeing any of it?
It's just super weird so see such vibrant colors coming out of a beet root which you don't see it develop at all.
And of course nature here also has it's quirks while growing these beauties. In the snap here below you can see that there are some dents on the outside of the beetroot and they have an impact all the way to the centre of the beet on the pattern.
It feels like the pattern is out of balance and that shift goes all the way to the inside as well. Like the person who came back from summer holiday who had an experience which also 'shook them to their core' but only later on they realize on that the small dent had such an impact.
Enough on the rant again. I used this beetroot in a recipe which was like a tray back with puff pastry as a dough bottom and these beetroots on top after a little boil to make them more softer.
Together with some soft cooked red onions and some honey and goat cheese this was a fantastic different type of dinner. I didn't enjoy the beetroot though taste wise. You can get the most awesome colors in the inside, but it still doesn't have to taste good.
Just like in nature. The autumn colors can be vibrant, but it still sucks ;)
