Sauteed Bitter Gourd with Tomatoes and Eggs

Hello, how are you? Bitter gourd is the main ingredient for today's dish, It has been a while since we last ate bitter gourd last time. I cooked sautéed tomatoes and egg, now I am going to add bitter gourd to it. I used to hate bitter gourd. I asked my mom, "Why do you like to eat this?" The only thing my mom answered was "Because it's healthy." Before, I used to be so picky with food, but now that you can add flavor to those vegetables, "not that bad" sometimes, when we always eat vegetables for a straight week, I always say to myself it is healthy LOL.



Ingredients and Prepping:

  • Water
  • Bitter Gourd
  • Salt
  • Cooking Oil
  • Tomatoes
  • Galic
  • Red Onion
  • Fish Sauce
  • All-in-one Seasoning
  • Ground Pepper
  • Eggs


Let's Cook!

In a pan, I added water, enough to boil the bitter gourd.

When the water started to boil, I added the bitter gourd.

After that, I added about a teaspoon of salt.

I let the bitter gourd boil for about 5 minutes, and then after boiling, I remove it from the pan and rinse it with water to remove the saltiness from the salt and set it aside. This process is important if you want to reduce the bitterness of the bitter gourd, and an effective way to almost completely remove the bitterness is to add salt to the bitter gourd and then leave it for about 10-20 minutes.

In a hot pan, I added about 2 tablespoons of cooking oil.

Next, I added the chopped tomatoes.

Mix until the consistency of the tomatoes turns mushy and soft.

After that, I added the aromatics, garlic, and red onion, and cooked them until the aroma came out.

After that, I added the bitter gourd.

Mix it and let it cook until all the water from the bitter gourd from boiling evaporated or when you hear a frying sound.

Then I added 1 half teaspoon of fish sauce.

I added all-in-one seasoning, too, just a little.

Then I added a 3 pinch of ground pepper.

After that, I added the beaten eggs into the pan. And by the way, I added all-in-one seasoning to it, I added about a teaspoon.

Let it sit in the pan for 10 seconds, and after that, mix it until the egg is well-cooked. I like it without moisture in it, so I cook it well.

Plated and served, perfect to eat while it's still hot :D

I love this! Bitter gourd used to be on my “no thanks” list too. But once you learn how to cook it right, like with eggs and tomatoes, it becomes kind of addictive! Now it's one of my fave foods. So easy to cook.😊

Same tayo jusko ayoko talaga ng ampalaya before pero okay lang naman talaga siya tyaka healthy siya hhaha. Oo talagang kapag nalaman mong pano lutuin goods na! 😃

Exactly! I couldn’t stand it before 😂 but now, as long as it’s cooked well, I can actually enjoy it. Bonus points, healthy pa siya, so win-win! 😃

Wow! This is so mouthwatering! I like bitter gourd, not because my mother told me it's healthy, but I just love its bitter taste. It could be that my taste buds get used to it. I remember when I was a kid, we had a lot of bitter gourd plants in our backyard, and I used to eat their fruits raw. I just couldn't explain it, but the bitterness matched with its juiciness had been so addictive for me. Now, aside from the sauteed one, I also love eating bitter gourd salad - just add lemon juice, pepper, salt, onions, tomatoes, and sugar to the thinly sliced raw bitter gourd and you're good to go! 😊💚 Happy cooking!

Some bitter gourd recipes is not my type. But, this one, Ohh, it looks yummy! I bet it's not that bitter because you blanched it first. I will make this sure thing tomorrow!

Back in high school, I was anemic (still am). I was advised to eat bitter gourd. The same recipe that you shared. But back then I eat it raw, I just add vinegar for flavour. I liked it for quite some time but it's difficult to find fresh bitter gourds.

Now, I never ate bitter gourd again. 😅
