It’s just a simple dish for us. A few days ago, my wife picked some fresh bamboo shoots from the home garden and preserved them to enjoy later. In case you missed it, I shared atmosphere of my wife picking fresh bamboo shoots from the garden and her simple water and salt pickling method in a post a few days ago. And she used pickled bamboo shoots she just pickled a few days ago to cook spicy curry with chicken and chicken offal. In addition to bamboo shoots from the home garden, this dish also includes other vegetables that she picked fresh from the home garden. Let's see what fresh vegetables my wife picked from the garden for this dish.

Ingredients for spicy curry with chicken and chicken offal.
chicken
chicken offal
pickled bamboo shoots
basil
kaffir lime leaves
galangal
lemongrass
culantro
dried chilli
shrimp paste
garlic
turmeric
pork flavour seasoning powder
oil
water

How to cook spicy curry with chicken and chicken offal : Crush the garlic, galangal,
lemongrass, turmeric, dried chilli and shrimp paste using a pestle and mortar to make curry paste for spicy curry.


Put a pot on the stove and heat a little oil. Then add the curry paste to the pot and stir-fry until the curry paste is cooked and fragrant.

Then add the chicken and chicken offal to the pot, and stir-fry them with the curry paste until cooked.

Add water to the pot, bring to a boil. Season with the pork flavour seasoning powder. Then add the pickled bamboo shoots to the pot and simmer.

Once the pickled bamboo shoots are cooked, add the culantro, basil, and kaffir lime leaves to the pot, then stir and simmer for a while, then turn off the heat.


It's finished, spicy curry with chicken and chicken offal. Enjoy 😋
