Hello everyone. How are you today? I hope all is well with you and your family. My wife and I have no plans to go out today. After we sent our granddaughter and autistic son to school. We live a simple life at our home in the countryside. We still not the picky eater with simple food my wife cooks from chemical free vegetables in our home garden. And in this post, I want to share a simple food for lunch today. My wife cooked spicy chicken and mixed vegetable curry in coconut milk for lunch today. This time she picked all vegetables from our home garden. What vegetables did she pick from the home garden for this dish? Let's go.

Hyacinth bean

Basil

Kaffir lime leaves

Green brinjal

Purple eggplant

All the vegetables for this dish are from our home garden.

Ingredients for spicy chicken and mixed vegetable curry in coconut milk.

chicken hyacinth bean basil kaffir lime leaves green brinjal purple eggplant coconut milk shrimp paste shallots garlic dried chilli pork flavour seasoning powder fish sauce sugar water

How to cook spicy chicken and mixed vegetable curry in coconut milk. Wash and chop all the vegetables.

Crush the shallots, garlic, dried chilli and shrimp paste using a pestle and mortar to make the curry paste for this dish.

Put a pot on the stove and turn on the heat. Then add a little coconut milk to the pot. Stir the coconut milk to a boil and add the curry paste to the pot. Stir the curry paste with coconut milk until the curry paste is cooked and fragrant.

Then add the chicken to the pot and stir-fry chicken with the curry paste until the chicken is cooked.

Then add water in the pot and bring it to a boil. When the water is boiling, add the green brinjal to the pot.

Add the hyacinth beans in the pot.

Add the purple eggplant in the pot.

Boil until the all vegetables in the pot are cooked, then add the basil to the pot. Stir and simmer for a while.

Then season with pork flavour seasoning powder, fish sauce and sugar. And add the coconut milk to the pot again. Stir and turn off the heat.

It's finished, spicy chicken and mixed vegetable curry in coconut milk.
