While reading your post, I remembered I had a food trip in a Filipino food restaurant, I ordered Pinakbet and it includes Bitter gourd vegetable on it. Unfortunately, the bitterness of this vegetable was so strong then, I included a photo of the food. My mother also knows the technique you shared about using salt to lessen the taste of bitterness on this veggie. I like your recipe, I would try it. Fries is my favorite. It's brilliant to mix bitter gourd with fries. Thank you for sharing this great idea.
