Stir Fried Water Spinach and Tofu

Hello Hiveans!!
It's been a while since I last posted anything here.
Maybe most of you heard or have seen the news regarding the typhoon Tino which hit Cebu, including Talisay City almost q week ago. We were among those that were affected. That's the reason why I am not active here for a week.

I'm still recovering from that devastating and traumatic experienced we've encountered. My daughter @tegoshei posted the details of what had happened to us during the typhoon already. At the moment these are the situation in some areas of our house 2 days after the flood and typhoon.

Arashi's bed is so muddy, our fridge is lying on our dining table. It's really painful to see these photos taken by my husband. But we are still thankful that we are safe and so much grateful for all those who helped us.

For now we are temporarily staying at one of our landlord's houses. We are really blessed to have them who treated us like family, because I can't imagine staying in an evacuation center. So despite everything, we are still lucky and blessed to have stayed in a better shelter.

And thankfully, I have the courage to start posting back here and I will try to be more active.
As I mentioned earlier, we are blessed to have a kind landlord, yeah there not just kind but generous too. They gave us a bunch of fresh water spinach (kangkong) yesterday, so I was able to cook it and shared some to them.

It was stir fried water spinach and tofu dish. So let's take a look at how I made it.

Stir Fried Water Spinach and Tofu



INGREDIENTS:


  • Water Spinach (kangkong)
  • Tofu
  • Pork
  • Garlic
  • Onion
  • Ginger
  • Salt
  • Ground Pepper
  • Soy Sauce
  • Sugar

PREPARATION:


Wash the water spinach thoroughly and then pick the leaves individually and cut the softer stem. Wash them again thoroughly using a strainer and then set aside.
Pat dry the tofu and then cut them. (I cooked the tofu in the air fryer to make it firm. After cooking, I cut them in smaller cubes.)
Wash the pork then cut it into smaller pieces.
Peel and wash the ginger then cut it into strips.
Peel and wash onion then cut it into small pieces.
Crush and peel garlic then cut it into small pieces.
Set all the prepared ingredients aside.


COOKING TIME:


Heat some canola oil in a pan, sauté onion and then the garlic and ginger until aromatic.

Then add the pork and sauté them with the aromatics until it becomes golden brown.

Then add ground pepper. Stir and mix.

Since the pork is still hard, I added a cup of water. Add a pinch of salt to taste. Let it simmer and cook until the pork soften and the water evaporates.

Then add the air fried tofu, then add soy sauce. Stir and mix until well combined.

Then add the water spinach stems. Cook for a few seconds and then add the water spinach leaves and mix them well.

Add some water if needed and a teaspoon of sugar to balance the flavor. Cook until the spinach becomes softer but still crisp.

You can add oyster sauce to make it more flavorful.

And there it is our stir fried spinach is ready to serve and share some to our landlord.

Despite the devastating situation we still had a good meal. Being safe is all that matters the most and I'm grateful that we are.

But you know what, you are cooking my favorite Adobong Kangkong, or actually, Kangkong belongs to the spinach family.

I'm a bit better now...and yes it's a lot of work to do in cleaning the house. But there's somebody who cleans there and my husband helps there too. While my daughter and I have to tidy up our temporary home at the moment.

Hello @arashi0416! It is heartbreaking to see the news about Typhoon Tino's consequences in Cebu City. I am glad you and your family are safe and have a comfortable shelter. Your landlord is so kind. How are you now? What happened was traumatic and I hope you can process everything slowly. Recovery might take time but for sure you will get there. Think of yourself first and your family's well being. Help each other guys. This will pass.
