Sadly, the members of my family are not feeling well these days, especially my daughter @tegoshei. She had a fever and sore throat 3 or 4 days ago, but thankfully, she feels better now. My husband had a little cough too, but he's also okay now.
Luckily, I didn't have a fever and cough like them, but today I felt dizzy due to my migraine and hypertension. This is also because of the bad weather here recently.
So, my daughter @tegoshei volunteered to help me in cooking our dish for lunch.
We have some chicken and some tomatoes that my husband bought earlier this morning, so I decided that we would cook a simple and easy-to-cook dish because my daughter will be our chef this time. But yeah, I need to assist her, and we'll keep taking turns, especially in sautéing some of the ingredients, because until now, she's afraid of splattering cooking oil. 😅🤫
So, this dish is a mother-daughter team-up! Without further ado, let' see what it looks like.
Sautéed Chicken with Fresh Tomatoes…
INGREDIENTS:
- Chicken
- Tomatoes
- Onion
- Garlic
- Ginger
- Soy Sauce
- Garlic Powder
- Chicken Cube
- Salt
- Sugar
- Canola Oil
- Water
PREPARATIONS:


Wash and clean the chicken thoroughly.
Wash and slice tomatoes.
Peel and wash the onion, then slice it into whatever size and shape you like.
Wash and peel the ginger, then cut into strips.
Crush and peel the garlic, then cut into small pieces.
Set them all aside.
COOKING TIME:




Heat a little amount of canola oil in a pan or cooker.
When it's hot enough, sauté onions for a few seconds, then the garlic. After a few seconds of sautéing the garlic and onions, add the ginger. Mix these ingredients well by stirring and sautéing. Then cover for a while to create a good aroma.


Then add the tomatoes, sauté them together until the tomatoes become tender and a bit caramelized.



Then add the chicken. Mix them well with the aromatics. Cover the pan and continue cooking until the juice from the chicken comes out or renders. Wait for that juice to evaporate.




Then add some seasonings like soy sauce, ground black pepper, garlic powder, and a pinch of salt to taste.


You can also add a small amount of sugar to balance the sour flavor of tomatoes. But this is only optional. Then mix them well all together.





And then, add two cups of water, let it boil and continue cooking until the chicken becomes tender and the water has reduced. Then add the chicken cube. Continue cooking for a few minutes until the sauce becomes a bit thick.






And there it is... our dish created through teamwork is done. Not to boast, but it's really yummy. The lighter, sour taste of fresh tomato juice can satiate your palate. The chicken absorbed the tasty flavor of the sauce from the outside to the inside of the chicken.
It’s really delicious indeed, and might be because it's a team effort and has two hearts in it. 🥰

I must teach my daughter another recipe soon when she's free from work. We're having fun despite not feeling that well, but anyway, my daughter is always funny and such a bloomer!! 😍
