How is your weather out there? It's been raining heavily here which has caused flooding in some areas in our city. Thankfully, we are all safe.
Anyway, in this kind of weather, it's really good to have a hot meal like some hot soup dishes and so on. As for us here, I made rice porridge paired with crispy malunggay or moringa leaves fritters.
My daughter @tegoshei requested me to cook some porridge because she was suffering from a toothache again due to her impacted wisdom tooth. So, it's hard for her to chew any hard food. But she's a bit better now.
Here's the rice porridge and the crispy moringa leaves fritters that I prepared.
Rice Porridge and Crispy Malunggay or Moringa Leaves Fritters
INGREDIENTS:
For Rice Porridge:
- White Rice
- Chicken Breast
- Squash
- Malunggay Leaves
- Ginger
- Spring Onion
- Knorr Chicken Cube
- Knorr Liquid Seasoning
- Salt
- Water
- Hard Boiled Eggs
For Crispy Malunggay Fritters:
- Malunggay Leaves
- Eggs
- Spring Onion
- Cornstarch
- Garlic Powder
- Ground Black Pepper
- Magic Sarap Seasoning
- Canola Oil
- Cold Water
- Ice Cubes
PREPARATIONS:
For the Rice Porridge:
Wash and peel the squash, then cut into smaller cubes.
Wash and peel the ginger, then cut to your desired size and shape.
Wash and cut the spring onions into small pieces.
Wash the rice thoroughly. Then set aside with the rest of the ingredients.
For Crispy Malunggay Fritters:
Pick or strip the leaves from the stem. Then wash the stripped leaves thoroughly and set aside some of the leaves separately for the porridge.


Then cut malunggay leaves into small pieces.




Put them in a bowl and mix them with the spring onions, cornstarch, garlic powder, ground black pepper, and eggs. I also added a little crispy fry. Then add cold water and mix them well. Set aside.
COOKING TIME:
For the Rice Porridge:
Add some water to the washed rice, then put the ginger and cook in a pot or rice cooker.


When the rice is already cooked, add the chicken and the Knorr chicken cube. Continue to cook until the chicken becomes tender, then add a pinch of salt and Knorr liquid seasoning to taste.


Then add the squash, and a bit later add the spring onion, followed by the malunggay leaves. Carefully mix them well, and that's it.
Transfer it into a serving bowl, add some hard-boiled eggs, and it’s now ready to eat.
I was really glad for the very nice texture of the rice. And it tasted really good. It has a subtle flavor that satiates your palate. And my daughter really loves it, and my husband loves it a lot too. 🥰
For the Crispy Malunggay Fritters:
Add some ice cubes to the mixture.


Then heat some canola oil in a pan or cooker. Scoop some of the mixture using a bigger spoon and then fry until they are all cooked. This is how simple it is to make and cook crispy fritters or chips. Then serve while it is still hot.


It was really savory, and we had a happy tummy again. 😄
