The weather is exceptionally nice this morning. The air is crisp and clear, with gentle morning sunlight streaming through the doors and windows. It's truly the perfect start to a good day. After basking in the energy of the good atmosphere, it's time to head into the kitchen and prepare my favorite easy-to-make, delicious dishes. Inspired by the bright colors of the day, I diligently crafted a delicious dish. I prepared colorful ingredients to make Stir-fried Glass Noodles with Oyster Sauce and Chicken, a fragrant, tender dish that's sure to satisfy the whole family.

This dish is called Stir-fried Glass Noodles with Oyster Sauce and Chicken. It features chewy glass noodles tossed in a flavorful sauce, tender chicken, and a variety of sweet, crunchy vegetables. This one-dish meal is packed with flavor and nutritional value.
Recipe and Method: Stir-fried Glass Noodles with Oyster Sauce and Chicken
This simple and delicious dish features chewy glass noodles and a rich, flavorful sauce.
Ingredients

- 1 small package of dried glass noodles (approximately 50-80 grams)
- 150-200 grams of chicken (breast or thigh), cut into bite-sized pieces
- 1 tablespoon finely chopped garlic
- 2-3 tablespoons of vegetable oil for stir-frying
- Vegetables of your choice (e.g., shredded carrots/pieces, shredded cabbage, chopped celery/scallions), approximately 1 cup
- A little water/stock (for stir-frying glass noodles)
Ingredients for the sauce
- 2 tablespoons of oyster sauce
- 1-1.5 tablespoons of light soy sauce/seasoning sauce
- 1 teaspoon of sugar (adjust to taste)
- A little sweet dark soy sauce/sweet soy sauce (for added color)
- A pinch of ground pepper
How to make it

- Prepare the glass noodles: Soak the dried glass noodles in water until soft (about 10-15 minutes) or according to package instructions. Once softened, drain and cut into slightly shorter pieces (for easier stir-frying and serving). Set aside.
- Prepare the chicken and vegetables: Cut the chicken into bite-sized pieces. Prepare all the vegetables.
- Make the sauce: Mix oyster sauce, light soy sauce, sugar, sweet dark soy sauce, and ground pepper in a small bowl. Mix well. Set aside.


- Heat a pan, add minced garlic and fry until fragrant. Add chicken and stir-fry until almost cooked. Season with a little of the prepared seasoning sauce.



- Add vegetables: Add vegetables that take longer to cook, such as carrots, and stir-fry first, followed by other vegetables, such as cabbage. Stir-fry until the vegetables begin to soften and are cooked.



- Add glass noodles: Add the soaked glass noodles, followed by the remaining seasoning sauce. Add a little water or broth to help the glass noodles absorb the flavors and prevent them from drying out and sticking to the pan. Stir-fry until the noodles are cooked through and translucent.

Add chopped spring onions/celery (if available) and stir-fry quickly to combine. Taste and adjust seasonings as desired (e.g., add more soy sauce/fish sauce for saltiness, or sugar for sweetness).
To serve: Turn off the heat and ladle the stir-fried glass noodles onto a plate. Serve hot.
