People who know me probably should know by now that I'm a big fan of fluffy pancakes!
I have a favorite diner place I go to when I want to be productive - and that place serves great fluffy pancakes. I'm actually surprised I haven't wrote a post about that restaurant yet but maybe I will - if I remember it.
The 2nd restaurant I found was Flippers and I've already shared about it here. It was so delicious too! And they even have the meal kind.
When I lived in Osaka, I've always wanted to go to 幸せのパンケーキ (read as Shiawase No Panke-ki) or A Happy Pancake. My desire to go came from a word of mouth - I forgot where I heard it from, probably a friend or a coworker told me about it. They say it's the best fluffy pancake they've tried in their lifetime. With that, I had high hopes and hope to visit one day.
Then, I left Osaka without visiting to A Happy Pancake. It was such a letdown, so I had to look for other alternatives. That's when I found my favorite diner place and Flippers.
Last weekend, I randomly searched for pancakes on Google Maps and to my surprise, I found it - there's A Happy Pancake in Tokyo! I actually didn't know they have branches here in Tokyo and just today, I found out from their website that they have branches all over Japan! Oh wow!
I took the train to Kichijoji, getting lost in their shopping district, and finally went inside A Happy Pancake. It wasn't so crowded when I arrived there at almost 3 PM. Since I was alone, I got to sit in the counter seats overlooking the shopping area below. A Happy Pancake Kichijoji is located on the 3rd floor of an old building. I was reluctant at first but when I found the shop, my doubts were cleared.
They have a seasonal offer which was Peach and Rose hip Pancake since it's summer. I wanted to try it but when I saw there's a shop limited flavor, I went for it. The seasonal offer can be for next time.
I got myself the Classical Fran Boise Pancake. I have no idea what this was because it was my first time hearing of this word. 😅 Even until I ate it, I still don't quite understand what Fran Boise mean.
It was so delicious! I actually was hoping that the pancake wouldn't be burnt like what I've seen in the Google Maps reviews and fortunately, it wasn't burnt! It was soft and to my liking!
They have the meal kind too but I already ate at home so maybe for next time.
I ordered a set so I had an iced cafe mocha to pair it with. The cafe mocha was good - no complaints there but after having the entire cup for myself, I regretted it because I was palpitating like crazy the entire night. Sometimes I just really want to taste cafe mocha but I'll have to keep reminding myself that coffee will make me suffer after.
The pancakes were really good especially when the ice cream melted. It made it softer and milky. There's nothing wrong with this except that the pancakes weren't as soft as I thought they would be.

Still, the fluffy pancakes at A Happy Pancake gave me happiness that afternoon. 😉
