This is the first time I heard the name Pansit. But I think I have tasted some similar dishes in China though I don't know the names quite the same, and it was delicious. Which noodles have you used, seems to be rice noodles or a kind of potato noodles that looks more transparent than the wheat flour noodles.
I used rice noodles for this recipe! It is light and fresh tasting... and delicious, @tanzil2024 .
