
The snow just keeps on falling and I keep baking to stock up the sweets in the freezer for hubby.
Pumpkin Spice Cookies
Sift Together:
2 3/4 cups flour
2 tsp. cream of Tartar
1 tsp. baking soda
3/4 tsp. salt
2 1/2 tsp. pumpkin pie spice
Cream Together:
1 cup unsalted butter, softened
1 1/3 cup sugar
1/2 cup light brown sugar
2 large eggs
1/2 cup canned pumpkin puree (not Pie Pumpkin)
Preheat oven to 350°F.

Chop a few pumpkin seeds roughly with a knife and add them if you can.

Drop the cookies with a scoop onto parchment-lined trays and bake for 15 minutes.

I like to make these pumpkin cookies because our dog Mika loves to share a few bites when her daddy is having one.

I had enough left in the bowl to fill one small loaf pan. That little bread went to our elderly neighbor, to his delight.

Pumpkins Spice Muffins

I had a box muffin mix in the pantry and decided to make it up while I was doing a pumpkin baking day. The mix made 24 muffins and if you look closely, you can see where someone I know snuck one off the rack while I was doing dishes, naughty hubby.

This was this morning, January 26th after I shoveled a path for Mika to walk in. We are still expected to get more snow this afternoon.
