The snow just keeps on falling and I keep baking to stock up the sweets in the freezer for hubby.

Pumpkin Spice Cookies

Sift Together:

2 3/4 cups flour
2 tsp. cream of Tartar
1 tsp. baking soda
3/4 tsp. salt
2 1/2 tsp. pumpkin pie spice

Cream Together:

1 cup unsalted butter, softened
1 1/3 cup sugar
1/2 cup light brown sugar
2 large eggs
1/2 cup canned pumpkin puree (not Pie Pumpkin)

Preheat oven to 350°F.

Chop a few pumpkin seeds roughly with a knife and add them if you can.

Drop the cookies with a scoop onto parchment-lined trays and bake for 15 minutes.

I like to make these pumpkin cookies because our dog Mika loves to share a few bites when her daddy is having one.

I had enough left in the bowl to fill one small loaf pan. That little bread went to our elderly neighbor, to his delight.

Pumpkins Spice Muffins

foodiesbeehive-pumpkin-cookies-muffins-9.jpg

I had a box muffin mix in the pantry and decided to make it up while I was doing a pumpkin baking day. The mix made 24 muffins and if you look closely, you can see where someone I know snuck one off the rack while I was doing dishes, naughty hubby.

This was this morning, January 26th after I shoveled a path for Mika to walk in. We are still expected to get more snow this afternoon.

Stay safe and warm everyone, maybe you will find something fun to bake.

thank you !

These cookies look really good. I've never had pumpkin cookies before, so it'll be a good idea to try them. I'm sure they're delicious—there must be a reason your pet loves them so much.

Yes, they are good and Mika loves Pumpkin.

Oh, those tell-tale gaps in the row of goodies! Ha ha!

Yep, he was so busted sneaking a muffin.
