Misty Rain - Raspberry Jam - Freezer Veggies - by Sunscape

It has been a wet week off and on. Gardening between rain is fun as everything is soaking wet. But I get it done.

I still had 2 quarts of raspberries in the freezer from last fall. Now that the plants are setting berries, I decided to make jam out of the frozen berries since it was raining outside.

I had just enough berries to make 1 batch of raspberry jam.

The jars were washed and put in the oven to heat them before filling.

I processed the jam in a water bath for 10 minutes. I got 9 half-pint jars for the pantry.

I had cauliflower and broccoli in the fridge that needed to be used. I decided to blanch them both and roast a large pan for freezer meals.

Once frozen overnight on a baking tray, I vacuum-sealed two servings into each bag.

Now, I have roasted veggies on hand for a side when needed.

Another thing I like to do is chop up a small head of cabbage and fry it in olive oil with seasonings so I can have it as a side at dinner time. Trying my best to eat a lot of vegetables for the Keto diet.

I'm still eating a salad for lunch every single day. Kinda getting tired of it, but I'm determined to drop more weight. I have been better at eliminating most carbs, and have incorporated drinking green tea with cloves and cinnamon. Supposedly, it is supposed to help with dieting, too.

Well, that's it for today. I'm off to get adjusted at the chiropractor's this morning. Have a wonderful day, everyone!

We didn't get that much rain in the last week, so not too much food preserving here... Have both helpers most days now so we are getting caught up while we can.

Nice that you have good help to get so much done. You have a huge amount of work to do on that farm.

And this blog makes me feel hungry right now ahhaha
