
Yep, that's what I made, Catfish sandwiches for dinner. Simple and oh so tasty! I'm going back in my edited photos, trying to catch up with some posts that were meant to be made earlier in the month, lol.

I had a few Chibata rolls that needed to be used; rather than feed them to the birds, I decided to make a simple dinner. Plus, I have a lot of fish in the freezer too.
Dipping the catfish in a simple egg wash and then breadcrumbs seasoned with salt and pepper was all that was needed.

Hubby and I both love fried fish, and putting it on a roll with lettuce and some Wasabi sauce for me, and tartar sauce for him. I did make a side salad to finish off the meal. We do our best to have a salad at least once a day.

I did slice my roll very thin to keep the carbs down a little bit since I'm doing a Keto -style diet, well, for the most part, lol.

Actually, I don't know why I never thought to put the fish in a sandwich, but it really hit the spot and will certainly happen again.

This is the typical salad that I make every day for lunch. Hubby usually eats some leftovers from the previous days. I'm out of tofu and avocados, so I guess I'd better find time to go shopping this week.
This morning, I have some seedlings to transplant and more trays to sow, which will keep me busy throughout the morning. Then at 1:30, I will have another salad to break my fast. Have a great day, everyone.
