I'm finally catching up on some photo editing and taking time to share a few posts. I have been so busy cleaning out gardens and preparing beds for planting that there wasn't much energy left to do daily postings.
This was what I decided to make for Good Friday, a fish fry! My brother always brings me Catfish from Virginia when he visits, along with Venison. I had a large package in the freezer and decided it was a good day to make it.
These Jalapeno Poppers were calling out to me when I took the fish out of the freezer. Of course, then I had to have them for an appetizer. My husband and I just love having them on hand, as many of you know I grow a lot of them.
Cornmeal, flour, Cajun seasoning, salt and pepper is all I used for the breading. Don't those fillets look nice and meaty? It has been over 30+ years since I've made Catfish, and I was excited to have it for dinner.
After frying the fillets, I let them drain on a paper towel and patted most of the oil off.
Now you can't have a fish fry without a few French fries, right? I put a few under the broiler while the fish was cooking. I did have a few on the side, but with my meal I decided on cottage cheese along with some broiled Brussel sprouts.
It is hard to stick to a carb-free diet when your spouse loves carbs. I am doing my best to keep dropping weight for a healthier life.
Once the garden starts producing fresh veggies, I will be eating a lot more salads and cucumbers. That will be helpful along with taking Mika for a daily walk now that the weather is nice. That's it for today friends, have a wonderful weekend.
