I am craving sweet, sweet banana bread pudding. So I thought I would make one,
but with zero sugar.
Preheat the oven to 350 degrees Fahrenheit.
Grease the bundt pan all over and generously with butter.
Mash two of the bananas.
To the mashed bananas, add
Beat with a hand mixer until smooth.
Now for the topping.
To the melted butter, add cinnamon.
<
Then add 2/3 cup of brown sugar, and mix well.
Pour the topping evenly onto the bundt pan.
Layer sliced banana on top of the topping.
Now, gently add the banana bread pudding batter over the banana topping, then smooth the top.
Put it in the preheated oven and bake for 30 to 40 minutes. A toothpick should come out clean, with some moist crumbs. It is a pudding, not a cake.
Cool the banana bread pudding for 10 to 15 minutes on a rack.
When it is cool, remove banana bread pudding from thhe bundt pan.
And serve.
