It is starting to be warm in California!
I don't know why, but an ice cream treat is always so special. Have you heard the saying “There’s nothing wrong with me that a little ice cream won’t fix” or “Ice cream makes everything better”?
This recipe is a twist on ice cream. It has the same effect as ice cream on me!
I put a cup cottage cheese, collagen, and one banana in the blender.
I use collagen peptides and add 2 scoops a day to any of my drinks (coffee or milk or cocoa, etc), as I used it here. It has a neutral flavor.
Collagen peptides are a supplement that stimulate the activity of special cells in our body by supplying the building blocks needed to produce new collagen. In other words, collagen is a VIP, Very Important Protein, because it’s 1/3 of all the protein in our bodies. It includes 8 of 9 essential amino acids. 1
Then I added honey.
The honey I've been using is from a local company. Just like most of the pure, raw honey, it has solidified to crystallized honey.
Solid honey retains its nutritional value even after crystallization. The vitamins, minerals, enzymes, and antioxidants present in honey remain unchanged. Whether in liquid or solid form, honey provides numerous health benefits and can be incorporated into various recipes and natural remedies. 2
I really should use my honey spoon instead of a regular teaspoon. Some say it minimizes the crystallization of honey.
I also added pure vanilla extract.
Vanilla extract just adds flavor and aroma to this frozen dessert!
Then I blended the cottage cheese, collagen, banana, honey and vanilla extract until smooth.
Mason jars (like the one below 👇) have become a mainstay in most kitchens as well as mine. They are stylish and attractive. Also, they are functional and affordable and have multiple uses.
After the mixture was blended and all smooth, I transferred it into a Mason jar.
2 tablespoons of chia seeds and mix thoroughly.
One ounce (about 2 tablespoons) of chia seeds contains nearly 10 grams fiber and 5 grams protein, plus omega-3 fatty acids, per the United States Department of Agriculture. 3
I added chia seeds for extra nutrition and mixed them in thoroughly. Chia seeds, when soaked, absorb liquid and thicken into a gel-like consistency.
Into the freezer, it goes.
Do not freeze it for more than four hours, because it becomes harder to scoop.
You just want to have the consistency of ice cream without it being too hard!
After 4 hours:
A refreshing frozen treat that is easy and yummy!
