When I am craving breakfast, I eat it anytime, even for dinner.
I used one pound of ground chicken, salt, pepper, onion powder, garlic powder, and paprika. Then I mixed it thoroughly and formed chicken meatballs the size of a golf ball.
I fried the chicken sausage in very little oil over medium heat. What I do is flatten the chicken balls with the tong or spatula in the pan as I fry them. I give it about 3 minutes per side.
I cooked all the chicken sausage and set aside what I don't need for this dish in the refrigerator or the freezer, for future use in other dishes.
I scrambled eggs for this dish. I already have bacon in the freezer, and all I had to do was reheat the bacon. Then I toasted the waffles.
Then I assembled my dinner.
