An All-Vegetable Recipe for the Family, Crafted with Love and Care Ft. Patis (Fish Sauce) as Main Seasoning

Here's a heart shaped Squash for y'all, I got it in the market and one thing I first noticed in it was the heart shape of it. Cool no?

It's not a rare shape for a squash I think, but isn't it really cool? And seeing the quality of it, I knew this has a nice texture in it too. And yes, I will use this for today's recipe.

Today is an all vegetable recipe. And because I am not feeling so well for days now, I think this is really the best time to have this.

Am I the only who's like this? I'll stop eating a not so healthy foods and when it finally kicks in, I'll stop and eat more veggies? Lol

Oily foods is really just so good that it is hard to resist them. Another thing, I am having a hard time eating less rice these days so I really need to do something with this.

So, let's G?

Before anything else, I picked fresh Malunggay first in our backyard. Hello there pretty one ♪⁠┌⁠|⁠∵⁠|⁠┘⁠♪

And here's are the Ingredients. We have Sitaw, Okra, Kalabasa, Malunggay fresh from the backyard, Ginger, Garlic and Onion. I already peel those that needs peeling, I also cut them into smaller sizes like those (⁠ノ゚⁠0゚⁠)⁠ノ⁠→

And with the Special participation of Patis or Fish sauce, haha. We don't usually use this at home, but now coz it is all vegetable, we'll need something that will make this tasty even though it is all vegetable.

I don't really sautee this kind of dish but this time I decided to do so, for a change you know, lol. Starting with garlic, onion and ginger, thanks to this the smell is already so good. Ahhh, as you all can see I didn't use a lot of oil in it, just enough oil to sautee everything

Next is putting the Sitaw first, followed by a fish sauce and some seasonings then we'll stir them to spread the seasonings.

I forgot to mention this but instead of regular water, I used rice water here. That's what I used to cook it, much better than just water.

Ulalammmmm! Looking so good now and the smell, the ginger it too overpowering but it is saurrrr good!

After 8 minutes of cooking the Sitaw, I put next the squash. I mentioned this before but I really want my sitaw softer and e say to chew so I cook it first.

After another five minutes, I put next the Okra and Malunggay together. We'll just cook it for a few more minutes and it's ready.

Tadaaaaan! It's really masarap y'all. I think it is also thanks to the fish sauce. Even without fish to mix in this dish, but the fish sauce enhanced more its taste. Yum, yum! \⁠(⁠^⁠o⁠^⁠)⁠/

Now, I also have to make a different dish for Mommy F because this is really bad for her coz of the fish sauce. I actually asked her first what she wants and she said she wants Ensaladang Labanos, but the incomplete version. Its basically a radish salad but with limited ingredients.

So here's the main character for that salad, lol. It's really fresh, the seller it was harvested just yesterday. And it's way cheaper compare to other. This is the reason why we look around to the market first before we buy something. There's always that one sellers there that serves a lil cheaper crops than the rest.

I peeled and cut them really thin like this. I used a tool to do that of course. A really old tool. Lol

Perfect! I put a salt on it and massage it real good. We need to do that to reduces its bitterness

We really shouldn't rinse it after massaging it with salt but gosh, I think i put a lot of salt in it. And goodness, for some reason it is really bitter and spicy despite what I did. I also made some of them yesterday but it is not that bitter compare to this. So I feel like have to rinse it.

So I squeezed the juices in the radish before putting salt, vinegar, a bit of sugar and the onion. That's just it. Mom doesn't want tomato so I didn't put some. And there we have it (⁠^⁠.⁠_⁠.⁠^⁠)⁠ノ

This looks so healthy. I love this specially having lots of vegetables in it. I love law-oy. It's a mix of vegetables but not using oil. Just purely a soup of mixed vegetables. It just similar with this recipe but without sauteed spices and no patis of course. I love leafy veggies so when I cook something like this it will have lots of leafy vegetables like malunggay, alugbati and even saluyot. Hehe, we just had it for breakfast earlier. It's paired with tuyo or bulad. And everyone loved it. I have not tried ensaladang reddish because we don't have reddish here. May be it would be nice to try it some time, hehe. Thanks for this wonderful recipe!

Oh is that pinakbet? I'm just confused how we should call that because here we call that pinakbet but many vegetables included from the market left-overs. That recipe is so healthy and I can smell the aroma almost. Well, you should be taking care more of yourself, so eat vegetables in more healthy reasons. It will be your asset when you grow older. Health is our friend when we get old.

This would make a hearty meal for me on a cold wintery evening. Nice one!
