Hello foodies, cómo va todo?! Como les comenté hace unos días por aquí estamos de vacaciones escolares, por lo que los días son más tranquilos en casa, lo que se traduce en tiempo suficiente para dedicarme a explorar en la cocina, probar nuevos sabores y elaborar platillos que requieren un poco más de tiempo y atención, como la receta que les comparto el día de hoy pollo encebollado al café.
Hello foodies, how’s it going?! As I mentioned a few days ago, we’re on school break here, so things are a bit more relaxed at home—which means I have plenty of time to experiment in the kitchen, try new flavors, and make dishes that require a little more time and attention, like the recipe I’m sharing with you today: coffee-braised chicken with onions.


Una combinación de sabores que nunca antes había probado, de hecho, jamás se me habría ocurrido agregarle café al pollo, pero dando vueltas en la web me encontré con esta receta, y por supuesto tenía que probarla, aunque confieso que sentía algo de preocupación por el resultado, ya que la verdad no tenia la menor idea del perfil de sabores que podría tener, y ni les cuento de mis comensales en casa, pero el experimento resultó fantástico.
No sabe al café del desayuno, que era una de mis preocupaciones, sino que le aportó un sabor tostado y profundo a la salsa que baña el pollo, y junto con el toque dulce de la cebolla terminó creando una combinación de sabores increíble, y como de costumbre le aporté un poco de mi personalidad al platillo agregando algunas de mis especias favoritas, no sin antes consultar con la IA si los sabores combinarán entre sí, ya que no queríamos arruinar el almuerzo, pero les prometo que resultó bien, así que sin miedo, vamos con la receta 🤣
A combination of flavors I’d never tasted before—in fact, it would never have occurred to me to add coffee to chicken—but while browsing the web, I came across this recipe, and of course I had to try it, though I confess I was a little worried about the result, since I honestly didn’t have the slightest idea what the flavor profile might be like, and don’t even get me started on my dinner guests at home—but the experiment turned out fantastic.
It doesn’t taste like the coffee you have for breakfast—which was one of my concerns—but rather, it added a deep, toasty flavor to the sauce that coats the chicken, and together with the sweetness of the onion, it ended up creating an incredible combination of flavors, and as usual, I added a bit of my own personality to the dish by throwing in some of my favorite spices—but not before checking with the AI to make sure the flavors would go well together, since we didn’t want to ruin lunch. But I promise it turned out great, so don’t worry—let’s get to the recipe 🤣


Ingredientes
Cuartos de pollo cortado en piezas
1 cebolla grande
2 dientes de ajo
2 cucharada de azúcar
Harina de trigo para enharinar las piezas de pollo
1 taza de café
1/2 cucharadita de comino
1/2 cucharadita de curry
1/2 taza de caldo de pollo
Sal y pimienta al gusto
Aceite
Ingredients
Chicken quarters, cut into pieces
1 large onion
2 cloves of garlic
2 tablespoons of sugar
Wheat flour for dredging the chicken pieces
1 cup of coffee
1/2 teaspoon of cumin
1/2 teaspoon of curry powder
1/2 cup of chicken broth
Salt and pepper to taste
Oil
Procedimiento/Procedure
Para la preparación de nuestro pollo encebollado al café lo primero que haremos es condimentar las piezas de pollo con la sal, las especias, el ajo y una cucharada de azúcar. Una vez listo este paso hacemos rodar por harina cada pieza de pollo para obtener una capa fina.
To prepare our chicken with onions and coffee, the first thing we’ll do is season the chicken pieces with salt, spices, garlic, and a tablespoon of sugar. Once this step is complete, we’ll dredge each piece of chicken in flour to form a thin coating.



Seguidamente agregamos en una sartén profunda dos cucharadas de aceite, y una vez caliente incorporamos el pollo y cocinamos a fuego alto hasta dorar por ambos lados.
Next, add two tablespoons of oil to a deep skillet, and once it's hot, add the chicken and cook over high heat until browned on both sides.



Una vez nuestras piezas de pollo han sido selladas agregamos las cebollas y cocinamos por 15 minutos a fuego medio hasta que las cebollas tomen color y se caramelicen.
Once the chicken pieces have been seared, add the onions and cook for 15 minutes over medium heat until the onions brown and caramelize.




Transcurridos los 15 minutos agregamos el caldo de pollo a la sartén, y en este punto se podrán dar cuenta del por qué enharinamos las piezas de pollo antes de sellarlas, ya que de forma inmediata se comenzará a formar una salsa espesa gracias a la harina.
Cocinamos durante 10 minutos más a fuego medio bajo para reducir nuestra salsa.
After 15 minutes, add the chicken broth to the skillet. At this point, you’ll see why we floured the chicken pieces before searing them—the flour will immediately begin to form a thick sauce.
Cook for 10 more minutes over medium-low heat to reduce the sauce.



En este punto agregamos la taza de café junto con el azúcar restante, rectificamos la sal y dejamos cocinar removiendo de vez en cuando hasta obtener una salsa sedosa que se mantenga sobre nuestro pollo. Apagamos y dejamos reposar 5 minutos y servimos.
En casa lo acompañamos con un arroz blanco con vainitas que le vino perfecto.
At this point, add the cup of coffee along with the remaining sugar, adjust the salt to taste, and let it cook, stirring occasionally, until you have a silky sauce that clings to the chicken. Turn off the heat, let it rest for 5 minutes, and serve.
At home, we served it with white rice and green beans, which went perfectly with it.





El resultado? Amamos este pollo, la salsa, el sabor que tomó el pollo, la humedad, ese sabor dulzón y tostado, sinceramente no encuentro las palabras para describir el sabor exactamente porque no sabe a nada que haya probado antes, así que no les queda otra que prepararlo en casa!
The result? We love this chicken—the sauce, the flavor it took on, how juicy it is, that sweet, toasty taste. Honestly, I can't find the words to describe the flavor exactly because it doesn't taste like anything I've ever had before, so you'll just have to make it at home!
