Hello foodies, qué tal su día?! Por aquí lo que va de día bien agotador, pero toca seguir con lo planificado, así que por aquí me tienen para compartir una nueva receta donde las legumbres son las estrellas. En este caso se trata de falafel de garbanzos y arvejas verdes, una mezcla que resultó realmente deliciosa, además súper crujiente, y por aquí en casa la calificamos con un 10/10.
Hello foodies, how’s your day going?! It’s been pretty exhausting so far, but I’ve got to stick to the plan, so here I am to share a new recipe where legumes take center stage. This time, it’s chickpea and green pea falafel—a combination that turned out to be truly delicious and super crispy. Here at home, we give it a 10/10.


Esta es una receta bastante versátil, ya que podemos comerlos así tal cual como plato principal acompañado de arroz y una ensalada fresca, como para un delicioso shawarma, como pasapalo para alguna celebración y hasta como snack de media tarde. En nuestro caso los disfrutamos con pan pita de orégano hecho en casa y una salsita de cilantro y limón, que le vino como anillo al dedo a nuestro falafel de garbanzos y arvejas verdes, y ahora sin más vueltas vamos con la receta.
This is a pretty versatile recipe, since you can eat them just as they are as a main course served with rice and a fresh salad, as a delicious shawarma, as appetizers for a celebration, and even as a mid-afternoon snack. In our case, we enjoyed them with homemade oregano pita bread and a cilantro-lemon sauce, which was the perfect match for our chickpea and green pea falafel, and now, without further ado, let’s get to the recipe.


Ingredientes
1 taza de arvejas a media cocción
2 tazas de garbanzos a media cocción
2 cucharadas de harina de trigo
1 cebolla pequeña
1 ramita de perejil
1 ramita de cilantro
3 dientes de ajo
1 y 1/2 cucharaditas de comino
Aceite para freír
Sal y pimienta al gusto
3 cucharadas de mayonesa
2 cucharadas de cilantro finamente picado
El jugo de medio limón
Agua
Ingredients
1 cup of partially cooked green peas
2 cups of partially cooked chickpeas
2 tablespoons of wheat flour
1 small onion
1 sprig of parsley
1 sprig of cilantro
3 cloves of garlic
1½ teaspoons cumin
Oil for frying
Salt and pepper to taste
3 tablespoons mayonnaise
2 tablespoons finely chopped cilantro
Juice of half a lemon
Water
Procedimiento/Procedure
Antes de comenzar con la preparación de nuestro falafel con garbanzos y arvejas verdes quiero aclarar que la forma tradicional de preparar falafel es con las legumbres crudas, previamente remojadas toda la noche, pero como mis hijos no son fans de esta forma de prepararlas uso un término medio y les doy un toque de cocción para quitarles un poco el sabor a "crudo".
Dicho esto lo primero que hacemos es unir las dos legumbres en un bol para seguidamente procesarlas junto con los vegetales, y esto lo hago en dos tandas.
Before we start making our falafel with chickpeas and green peas, I want to clarify that the traditional way to make falafel is with raw legumes that have been soaked overnight. However, since my kids aren’t big fans of this method, I take a middle ground and cook them just a little to take away some of that “raw” taste.
That said, the first thing we do is combine the two legumes in a bowl and then process them together with the vegetables—I do this in two batches.




Listo este paso incorporo el comino, la sal y la pimienta junto con las dos cucharadas de harina de trigo y presiono muy bien con un tenedor para compactar.
Once this step is done, I add the cumin, salt, and pepper along with the two tablespoons of wheat flour, and press down firmly with a fork to compact the mixture.



El siguiente paso es armar nuestro falafel que lo pueden hacer con la forma que deseen, en este caso les di forma ovalada con mis manos y una vez listos los pasé por harina de trigo y dejé descansar 5 minutos.
The next step is to shape our falafel—you can shape them however you like. In this case, I shaped them into ovals with my hands, and once they were ready, I rolled them in wheat flour and let them rest for 5 minutes.



Seguidamente en un caldero profundo agregamos una buena cantidad de aceite y una vez caliente doré muy bien por todos lados nuestros falafels de garbanzos y arvejas verdes para obtener una consistencia bien crujiente por fuera y un poco más suave por dentro.
Next, in a deep pot, add a generous amount of oil, and once it’s hot, brown our chickpea and green pea falafels thoroughly on all sides to achieve a crispy exterior and a slightly softer interior.





Para la salsa simplemente mezclé tres cucharadas de mayonesa, dos cucharadas de cilantro bien picadito, el jugo de medio limón, dos cucharadas de agua, sal y pimienta y listo, una salsa súper refrescante y ligera para "dipear" nuestros falafels.
For the sauce, I simply mixed three tablespoons of mayonnaise, two tablespoons of finely chopped cilantro, the juice of half a lemon, two tablespoons of water, salt, and pepper—and that's it! A super refreshing and light sauce for "dipping" our falafels.


Como ven, es otra receta que aunque sencilla lleva su tiempo de preparación, pero como por aquí estamos de vacaciones y no tenemos apuro estamos aprovechando, así que si tienes tiempo en casita, no dudes en prepararla!
As you can see, this is another recipe that, although simple, takes some time to prepare. But since we're on vacation here and aren't in a rush, we're making the most of it—so if you have some time at home, don't hesitate to give it a try!
