Hello foodies, how’s your weekend going?! It was a relaxing day here, so I didn’t want to overcomplicate things with dinner and decided to make stir-fried rice with smoked pork chops and vegetables—a super easy dish that’s pretty quick to make and, honestly, turns out delicious. And if you have kids at home, I guarantee this recipe will be one of their favorites.

As I said, it’s a really simple recipe to make; basically, all we have to do is chop up the different ingredients, and in this case, my protein was a smoked pork chop. I also decided to add some vegetables like carrots, green beans, onion, and leek, both to add flavor and color. And, of course, something that’s always a must in my recipes is the addition of some spices—in this case, curry and ginger—as well as fresh herbs like cilantro. And honestly, the combination of flavors was a huge success.
For this recipe, you can prepare the rice the day before, or, as in my case, you can cook everything together in the skillet. In the first case, you don’t need to add any liquid to the mixture, but in the second, since we’ll be working with uncooked rice, we’ll need to add liquid to cook it. So you have two options for making this dish, and now, without further ado, let’s get to the recipe.

Ingredientes
1 taza y 1/2 de arroz blanco crudo
3 tazas de agua hirviendo
3 chuletas ahumadas cortadas en cubos
1 zanahoria
1/2 cebolla
Ajoporro
Vainitas
1 cucharadita de curry
1 cucharadita de jengibre rallado
Una ramita de cilantro fresco picado
Aceite
Sal y pimienta al gusto
Ingredients
1 1/2 cups uncooked white rice
3 cups boiling water
3 smoked pork chops, diced
1 carrot
1/2 onion
Leek
Green beans
1 teaspoon curry powder
1 teaspoon grated ginger
A sprig of fresh cilantro, chopped
Oil
Salt and pepper to taste
Procedimiento/Procedure
For today's dish, the first thing we'll do is cut the pork chops into cubes, then sauté them in a deep skillet along with the ginger, and cook until the chops are golden brown.

While the cutlets are browning, we'll chop all our vegetables, which we'll add to the skillet once the cutlets are browned and cook until the vegetables begin to soften.

At this point, add the rice to the skillet along with the teaspoon of curry powder and a teaspoon of salt. Stir well for 2 minutes, stirring constantly, and you’ll see how the rice turns a bright yellow and browns slightly in the fat from the cutlets.

Next, add the three cups of boiling water to prevent the cooking process from stopping. Stir just once to combine everything, then cook over high heat, uncovered, until the water has evaporated to the level of the rice. At that point, lower the heat, cover, and let it cook for 15 minutes.

Once the cooking time is up, turn off the heat, add the finely chopped cilantro, mix well, cover for 5 minutes, and serve.

The result? A dish that's super cute and visually appealing, and packed with flavor.
