I think a roast beet salad works with fennel and orange - with a bit of feta. Fetta works well with beetroot as does citrus.. hope that helps. The bright sharpness lifts the earthiness.

Also, just stay earthy and do a beetroot risotto with fetta or Parmesan and parsley and roast garlic!!
