Yum. There's nothing better than fresh ground spices. My kitchen is never without a big knob of ginger, garlic, lemon grass, chilli etc. ice been cooking a lot of middle eastern style food and my pestle and mortar (love yours!) is being well used for cummin, fennel, coriander. European food can lack that vibe. I find it frustrating I can't get the same fresh ingredients from euro/UK markets in the same way we do here, but we are closer to asis I guess and we cook a lot of fusion global food.
The holy trinity of cooking that is for sure to always have in the house!
Dont get deceived by the looks of the mortar, the flavor gets pulled in because of the wood and once a mixture get a bit moisty (like this one) it is really hard to grind!
I got a heavy duty stone one afterwards and thst made it a lot easier. But you know...getting rid of old things haha.

Ah, love it. I have been making beef rendang from scratch, now that's amazing!!!!! If sauce is that good, make triple. Did you catch the middle eastern chili crisp recipe I shared? Can't get enough of it. I made two jars, next time six million jars.
I didn't as yet but I will totally look into this. I like these big kind of meals where the ingredients are just wholesome!

NO, I make the beef one! We get good, happy, organic beef here locally so I make it very, very occasionally.
