Extra Spicy Chicken Feet with Sambal Mercon Recipe

In this post, I want to share a recipe for chicken feet with spicy chili sauce that my wife made a few days ago. Basically, preparing chicken feet into a dish is very easy, and there are many menu options, because chicken feet are a simple dish.

This time, we wanted to turn chicken feet into a simple dinner dish: we made chicken feet with spicy chili sauce. For your information, chicken feet are the edible part of the chicken's leg. We purchased them at a frozen food store in town.

We bought a pack of chicken feet, weighing about 1 kilogram, for IDR 35,000. Although the chicken feet looked clean inside the packaging, we decided to clean them again for added hygiene.

The most important part to pay attention to is removing the yellow skin attached to the chicken feet. We scrape off the fine skin, trim the toes and nails, and scrub the entire foot to ensure it's clean. After cleaning the chicken feet, it's time to discuss the seasoning and cooking process for these spicy chili sauce-flavored chicken feet.

Since we want to make spicy chili sauce, the main ingredients are red chilies and cayenne pepper. Because spicy chili sauce is a type of chili sauce that's much spicier than regular chili sauce, we use cayenne peppers with an extra-hot red caplak chili sauce.


Tools and Ingredients

Here are the tools and ingredients we need to prepare first, starting from the main ingredients to other supporting spices.

  1. Prepare 1/2 kg of chicken feet, enough for a dinner of 6 servings.

  2. Red chilies (to taste, you can adjust the spiciness level; the more you use, the spicier it will be).

  3. Red bird's eye chilies (to taste).

  4. 6 shallots.

  5. 4 cloves of garlic.

  6. ⁠Just a fingertip-sized piece of ginger.

  7. ⁠Add sourness with lime leaves (to taste).

  8. ⁠Chop up some spring onions to add aroma and savory flavor.

  9. ⁠Other supporting kitchen spices include salt, Masako chicken-flavored seasoning, tamarind water, brown sugar, and white sugar.

  10. ⁠Lemongrass and bay leaves for boiling the chicken.

These are some of the tools and spices you need to prepare in advance for cooking chicken feet. Don't leave anything out, as it will alter the flavor.


How to Cook

Here, I will explain the cooking process step by step. I hope you understand the procedures I've outlined below:

  • Boil the chicken feet first. We chose to boil the chicken feet first to make them more tender before mixing them directly with the chili sauce. Boiling the feet is better for cooking and tenderizing the chicken feet than frying. When boiling the chicken feet, we added bay leaves and lemongrass to remove the fishy odor and kill bacteria.

  • Then, boil the red chilies and cayenne peppers until they become chewy. This will make them easier to grind.

  • Blend the chilies and other spices, such as shallots, garlic, and ginger, until smooth using a grinder. The texture should be smooth and all the ingredients should be well combined. Add a little water while grinding.

  • Sauté the ground chilies until they give off a fragrant aroma.

  • Wait for the chili sauce to cook for about 10 minutes, then add the chicken feet to the chili sauce mixture. Stir frequently until the spices are evenly distributed and absorbed into the chicken feet over medium heat.

  • To enhance the flavor, we also add salt, sugar, flavoring, and tamarind water, creating a strong blend of spicy, sweet, and sour flavors.

  • ⁠Then, while stirring, add a little water, add lime leaves and spring onions for a more aromatic and savory flavor.

  • Cook and stir until the spices are absorbed and the chili sauce turns a deep reddish color. Wait 20 minutes, then the dish is ready to be served and eaten.

Pada postingan ini saya ingin berbagi resep membuat ceker ayam sambal mercon yang dibuat oleh istri saya beberapa hari yang lalu. Pada dasarnya mengolah ceker ayam untuk menjadi masakan adalah hal yang sangat mudah, ada banyak piliahan menu yang dapat di olah, karena ceker ayam adalah olahan menu masakan yang simpel.

Kali ini kami ingin mengolah ceker ayam menjadi menu sederhana untuk makan malam, kami membuat ceker ayam sambal mercon. Untuk diketahui, ceker ayam adalah bagian dari kaki ayam yang dapat dikonsumsi, kami membeli ceker ayam ini di salah satu toko frozen yang ada di kota.

Kami membeli 1 pack ceker ayam yang beratnya sekitar 1 kilogram dengan harga IDR 35 K. Meskipun di dalam kemasan ceker ayam ini sudah tampak bersih, namun kami memilih untuk membersihkan lagi agar lebih higenis.

Bagian terpenting yang perlu diperhatikan adalah pembersihan kulit-kulit yang berwarna kuning yang melekat dikaki ayam, kami mengopek kulit-kulit halus, memotong bagian ujung jari dan kuku, serta menyikat seluruh bagian kakinya agar bersih. Setelah proses pembersihan ceker ayam dilakukan, saatnya kita akan membahas untuk bumbu dan proses memasak ceker ayam dengan rasa sambal mercon ini.

Karena kami ingin membuat sambal mercon, jadi bahan utama yang wajib ada adalah cabai merah dan cabai rawit. Karena sambal mercon adalah salah satu jenis sambal yang dibuat dengan rasa yang sangat pedas dibandingkan dengan sambal biasanya, jadi kami menggunakan cabai rawit dengan campuran cabai caplak merah yang ekstra pedas.


Alat dan Bahan

Berikut ini adalah alat dan bahan yang perlu kita sediakan terlebih dahulu, mulai dari bahan utama hingga bahan bumbu pendukung lainnya.

  1. Siapkan ceker ayam dengan takaran 1/2 Kg, cukup untuk makan malam dengan 6 porsi.

  2. Cabe merah (sesuai selera, bisa diatur tingkat kepedasan, semakin banyak, semakin terasa pedas).

  3. ⁠Cabe rawit merah (sesuai selera).

  4. ⁠Bawang merah sebanyak 6 buah.

  5. ⁠Bawang putih sebanyak 4 siung.

  6. ⁠Jahe seukuran seujung jari saja.

  7. ⁠Tambahkan rasa asam dengan daun jeruk (secukupnya).

  8. ⁠Potongan daun bawang secukupnya untuk menambah aroma dan rasa gurih.

  9. ⁠Bahan bumbu dapur pendukung lainnya terdiri Garam, Penyedap rasa masako dengan jenis rasa ayam, air asam jawa, gula merah dan gula putih.

  10. ⁠Serai dan daun salam untuk merebus ayam.

Itulah beberapa alat dan bumbu masakan yang perlu dipersiapkan terlebih dahulu untuk mengolah ceker ayam, jangan sampai ada yang tertinggal, karena akan mengubah cita rasanya.


Cara Memasak

Berikut ini saya akan menjelaskan proses memasak secara bertahap, semoga kalian dapat mengerti tata cara yang saya jelaskan di bawah ini :

  • Rebus ceker ayam terlebih dahulu, kami memilih untuk merebus ceker ayam terlebih dahulu agar tekstur ayam menjadi lebih empuk sebelum dicampurkan langsung dengan sambal. Proses perebusan lebih baik membuat ceker ayam menjadi lebih matang dan empuk dibandingkan dengan proses menggoreng. Saat merebus ceker ayam kami menambahkan daun salam dan serai, tujuannya adalah untuk membuang bau amis dan membunuh bakteri.

  • Kemudian rebus cabe merah dan cabe rawit hingga bertekstur kenyal, tujuannya agar dapat lebih mudah halus saat proses penggilingan.

  • Blenderkan cabe dan bumbu lainnya, seperti bawang merah, bawang putih dan jahe hingga halus dengan mesin penggiling, teksturnya harus harus dan semua bahan menyatu, tambahkan sedikit air saat proses penghalusan bahan masakan.

  • Tumiskan bumbu cabai yang telah dihaluskan tadi hingga mengeluarkan aroma yang wangi.

  • Tunggu proses pemasakan bumbu sambal hingga sekitar 10 menit, lalu baru kita masukkan ceker ke dalam campuran sambal, usahakan aduk-aduk hingga bumbu merata dan meresap ke dalam ceker ayam dengan kondisi api yang sedang.

  • Untuk menambahkan perpaduan rasa, kami juga memasukkan garam, gula, penyedap rasa, dan air asam jawa, sehingga perpaduan rasa pedas, manis dan asam berpadu dengan kuat.

  • ⁠Lalu, sambil di aduk-aduk, tambahkan sedikit air, masukkan daun jeruk dan daun bawang untuk menambahkan cita rasa aroma dan rasa gurih.

  • Masak dan aduk-aduk hingga bumbu meresap dan bumbu sambal berubah warna dengan kemerahan pekat, tunggu hingga 20 menit, makanan siap disajikan dan disantap.

Pada dasarnya proses membuatnya sangat mudah dan sederhana, tapi proses yang paling terpenting diperhatikan adalah saat pembersihan ceker ayam dan perebusan ayam untuk menghasilkan ceker ayam yang matang, empuk dan higenis.
