Today, I'm going to share a popular African soup that everyone knows about, which is Oha soup. Igbo people generally love Oha soup, although some tribes in Igbo Land call it 'orha', For example Anambara people while others call it 'Oha'. For example Imo and Abia state people. I learned to make Oha soup not just because it's my favorite but also because it's a traditional soup from my tribe.
RECIPE:
- Oha leaves (African Rosewood Leaves)
- Uziza (Ashanti pepper)
- Fresh Pepper
- Ogiri (Locust beans)
- Ofor (Soup thickener)
- Salt
- Palm Oil
- Crayfish
- Maggi seasoning (cubes or sauce)
- Beef
- Ponmo (Cow skin)
- Coco yam (Powder)
METHOD:
- Firstly, I washed the meat, Ponmo and poured it into the pot. I added half cup of water and add 2 cube of Maggi, a pinch of salt and a bit of fresh pepper. I allowed it to boil for 15 minutes before checking whether the water has dried up to add a little bit of water.
- I grinded my crayfish and pepper together and set it aside. My meat was ready so I added two spoons of palm oil and let it boil for a few minutes.
- After allowing it to boil, I added two more Maggi cubes, and a little pinch of salt, then allow it to boil again.
- I'm using powdered cocoyam, my mom taught me this method: to avoid lumps in the soup, pour the powdered cocoyam into a mortar, add a little water and mix until it thickens before pouring it into the pot.
- I added the grinded pepper and crayfish, ogiri, ofor, stirred the soup and allow it to boil. I went ahead to cut my Oha leaves ( Note: Don't use knife to cut Oha leaves, use your hand instead because if you use a knife it's generate bitter taste out of it. The fluid in the Oha leaf can affect the whole leaf to be bitter in the pot). I cut my uziza leaves with a knife.
- After cutting the Oha leaves with my hands, I washed the leaf thrice before checking if the soup had thickened.
- I tasted the soup to see if I needed to add anything, and since it was good, I added the uziza leaves into the pot and allow it to boil for 3 minutes before adding the Oha leaves.
AND GUYS
- Food is ready 😋! You can serve it with eba, fufu, or pounded yam.
