Tuna Curry Rice Vermicelli Noodles
Curry rice noodles are a traditional dish from Medan. The curry sauce, made with chicken, is typically enjoyed with rice noodles. Here, I wanted to put a twist on it by substituting the chicken with tuna. Tuna has incredibly tender flesh, so when cooked this way, it tastes absolutely amazing.

This is the first time I’ve tried this dish; honestly, I’ve never had rice noodles with curry sauce before. The curiosity to try it immediately struck me when I bought the tuna yesterday. The thick curry sauce, with its fragrant, aromatic spices, adds an extraordinary flavor.
Curry rice noodles are indeed a dish rich in flavor; this authentic specialty from Medan is an intriguing idea to try.
Ingredients


1 pack of rice noodles
1 potato
1 stalk of curry leaf
1 bay leaf
1 star anise
2 cm of cinnamon stick
2 cardamom pods
1 stalk of lemongrass
¼ teaspoon salt
60 ml thick coconut milk
3 dried chilies
1 candlenut
3 cm of turmeric
3 shallots
3 cloves of garlic
¼ teaspoon of coriander
A pinch of nutmeg
2 cloves
Cooking Procedure
Blend the spices in a blender until smooth, then boil the rice vermicelli until tender and drain.


Next, sauté one clove of shallot in a little cooking oil. Add the aromatic ingredients—curry leaves, bay leaves, cardamom, cinnamon, star anise, and lemongrass—and sauté until fragrant.


Then add the tuna that has been marinated in salt, along with the diced potatoes.

Add the coconut milk, then cook until the sauce comes to a boil. Don’t forget to add salt and adjust the seasoning to taste.

Result

Serve my curry rice vermicelli noodles on a serving plate. I place the boiled rice noodles on the plate and then pour the tuna curry over them. You can adjust the thickness of the tuna curry to your liking. I prefer it to be a bit thick—not too soupy—so it’s not too runny when eaten. If you want it to be more soupy, don’t let the curry get too dry while cooking.

As for the taste itself, it’s truly amazing—the natural savory-sweet flavor of the tender tuna creates an extraordinary taste. Plus, the umami flavor from the creamy curry sauce is so delicious; the spices are quite strong but perfectly balanced with the overall flavor, making the noodles absolutely delicious.
