Chayote Noodles with Medan Anchovies

If you’re craving noodles but can’t eat wheat flour, try making this vegetable noodle hack. It’s an inexpensive vegetable that few people like and rarely cook with. Chayote is easy to find, isn’t it? I was at a loss when I had this vegetable at home because everyone in my household was tired of the usual stir-fried chayote. So, I decided to turn it into something unique.




Chayote Anchovy Noodles

Chayote and anchovy noodles are a dish made by stir-frying chayote—which serves as the “noodles”—with simple seasonings. It’s then combined with crispy, fried dried anchovies. The anchovies add a delicious salty, savory flavor, complemented by the chayote’s natural sweetness.

Ingredients

1 chayote
30 grams of Medan anchovies
1 tomato
1 onion
2 cloves of garlic
5 green chilies
3 bird’s eye chilies
¼ teaspoon of salt
¼ teaspoon of mushroom broth




Preparation Instructions


Prepare all the ingredients. First, peel the chayote and remove the sap, then wash it thoroughly. Grate it with a vegetable grater so it resembles noodles.

Heat a small amount of oil, then fry the anchovies until golden brown.

Finely chop the onion, chili peppers, and tomato to your liking, and set them aside. Next, use the remaining oil to sauté the onions, chili peppers, and tomatoes until wilted.

Then add the chayote and stir until combined. Add a little water, salt, and mushroom broth. Cook until the chayote is just slightly wilted.

Finally, add the fried anchovies and stir until evenly mixed.
Adjust the seasoning to taste, and it’s ready to serve.

The chayote noodles are ready to serve—enjoy them while they’re still warm. Uhh, the taste is truly amazing. Just like regular noodles, chayote noodles have a lighter texture and, of course, the natural sweetness of the vegetable.

I really love it when I bite into the crispy anchovies—the crunch is just right, and everything tastes exactly as I wanted. When you enjoy all of this together, it’s truly the superstar flavor you’ve been waiting for. My mom also loves the result; she says it’s just like noodles, especially with its long, thin shape—just like special noodles.
