
Hello food lovers, today I will show you how to prepare a simple dish using my favorite small fish. This fish is wet anchovies, which I usually enjoy in the village where my grandmother lives. She cooks this fish until it is half dry, then fries it with onions This fish is known in the local language as "Bileh Leubot Goreng Bawang".
I think it is very delicious, even without sauce. I can enjoy it just by eating the fish itself. Since it's been so long since I've had it, I want to prepare it at home. I asked my husband to buy anchovies at the market, but they only had large ones, so I'll have to use these small ones instead. These fish are often dried and are delicious in sambal or cooked. My husband and I love these small fried anchovies so much that I'm going to try making them myself.

Well, if you're curious about the preparation steps, let's take a look at the steps below. It's very easy, and you can make it anytime, but again, you have to make it when the weather is good, like I did, to get good results.
Ingredients


1 teaspoon of salt
1 lime
4 cloves of shallots
Procedure
I wash the anchovies thoroughly, deliberately leaving the heads on because they taste really good when fried. Then I add salt and lime juice and let them sit for about 5 minutes.

Then I immediately dry them under the hot sun for about 3 hours, intentionally because I want them to be slightly moist.


Once dry, I immediately put them in another container and prepare the shallots for frying. Here, I use 4 shallots, sliced thinly.

Fry until golden brown, don't forget to add the shallots when frying. Remove and drain, then add curry leaves and green chilies for serving.

Result

Serve the fried wet anchovies while hot after frying, accompanied by warm white rice. The result is very tempting; this is my favorite dish. I usually enjoy it with rice without any additional accompaniments because it is that delicious.


The taste is savory and delicious, with a texture that’s not crispy but rather soft and moist. The aroma of the onions is reminiscent of fried meat, but I think this is even better. I highly recommend trying this fried anchovy dish at home.
