Ai has become my go to partner in the kitchen. It is quicker and easier to use than any cookbook.

This time it was used to make hummus, which is easily available in the grocery store, but it turns out that making it at home is as much as 60% cheaper.

Hummus is a creamy Middle Eastern dip made mainly from blended cooked chickpeas, tahini (ground sesame paste), fresh lemon juice, garlic, and extra virgin olive oil.

In a high-powered food processor or blender, combine the tahini, lemon juice, minced garlic, cumin, and salt. Process for 1 full minute until thick, pale, and thoroughly whipped.

Blend in Chickpeas and Ice Water
Add the softened chickpeas to the food processor. Puree Add the softened chickpeas to the food processor. Puree while slowly drizzling in 2 to 3 tablespoons of ice-cold water. Continue blending for 2 to 3 minutes, stopping to scrape down the sides as needed, until completely smooth and fluffy.

Garnish and Serve
Spread the hummus into a shallow bowl using the back of a spoon to create swoops. Drizzle generously with extra virgin olive oil and sprinkle with paprika or fresh parsley.

I've yet to create an Ai recipe that I didn't enjoy.! The directions and tips are easy to understand. Ai has made my time in the kitchen more efficient.

The tahini is the most expensive, but a jar makes 8-10 batches of hummus.

Great looking hummus. We always have some in our fridge. Usually Trader Joe's. Its one of the things they do well and at a good price. My youngest son roasts chick peas and eats them as a snack. He's a healthy kid lol but they are good with some seasoning. You can go alot of different ways with the seasoning.

It's funny how humus has become a staple for many of us! My Aldi's store has a good selection of hummus and they deliver. Wish I had a Whole Foods close by.

A delicious dish. We make it often at home because we love chickpeas.
We usually buy them dried and need to cook them, but the first step is to soak them in salted water for 8 hours, generally overnight. Then we rinse them and cook them. Madrid-style stew is my favorite, but it's also very good with cod or just with vegetables. Of course, a pressure cooker is highly recommended.
