Making Fresh Beef Bone Soup.

The cold weather makes me want to cook something hot, fresh and can make me sweat. And because I still have beef bones which of course still have a lot of meat, and this is indeed very good to be made into soup, then I will process it my way. Maybe my friends have their own techniques and ingredients that are different from mine. But I'm sure it's all just a matter of taste.



The ingredients I use to make this soup are


1. 500 grams of Beef Bones

2. 2 liters of water

Spices to be ground


1 teaspoon of black pepper
2 tablespoons of salt
4-6 cloves of garlic
2-4 cloves of shallots
2 candlenuts
A little ginger, about half an adult thumb
1 thumb of Galangal
1 cardamom

Spices to be crushed and sliced


1. 1 thumb of Galangal
2. 1 tomato
3. 2 stalks of celery leaves 1 stalk of leek



How to make:

1. First, clean the beef bones then boil them with 2 liters of water for about 1 hour so that they are really tender and the meat can be separated from the bones and in this process I only use medium heat. And oh yeah if you want it faster you can also use a pressure cooker.

2. While waiting for the beef bones to cook, I prepare the fine spices and blend them. And what I will puree are shallots, garlic, candlenuts, cardamom, galangal and ginger. (in the process of pureeing the spices for this soup, some ingredients are roasted first and then pureed, but some are directly pureed and then sauteed with a little oil. But I don't do all that).

3. After that I slice the tomatoes, spring onions and celery leaves and crush the galangal. (you can skip the use of galangal but be sure this one ingredient can make the soup fresher and there is no beef smell at all.)

4. After waiting 1 hour and I made sure the meat and bones could be separated, I put in the spices that I had pureed earlier.

5. Then add the galangal that has been crushed,

6. After that add salt and pepper powder. And stir until smooth and adjust the taste.

7. After that add the tomatoes, and celery leaves then turn off the stove.

8. While it is hot you can enjoy this Beef Bone Soup.

I love your recipe! You know, in my town, we don't add any tomato to beef soup or beef bone soup, generally, but I like the flavor and mildly scarlet color it adds.
