Harvesting and Eating Daikon Radishes

I love daikon radishes so much. Daikon radishes contain vitamin C, potassium, dietary fibre, and digestive enzymes such as amylase. Actually, the leaves contain even more nutrients. I love eating daikon leaves as well.

My husband found some daikon seeds at a local hardware store this spring. We sometimes find daikon at the supermarket, but not very often.

Growing daikon isn't so easy in my area because of the dry conditions and the soil. The soil here is pretty rocky, so adding new soil and fertilizer every year isn't an easy process. I really miss my grandparents' gardening knowledge. Anyway, my husband did a great job trying to grow them this year.

The daikons were a bit small, but they looked pretty. I thought they were ready to harvest because I could see the tops poking out of the soil. My husband wanted to wait a little longer because he had added more soil a few weeks earlier.

IMG_5674.jpeg

They looked pretty good, but they were still small. The leaves looked delicious as well.

First of all, I wanted to make daikon pickles. Well, the inside was a little dry and had holes like these. I think we waited a little too long to harvest them. Also, the dry, hot weather we had for a few days probably affected them.

IMG_5672.jpeg

However, they smelled nice. They tasted a little bitter, but I don't mind bitter daikon. I used sugar, vinegar, sake, salt, and red chilli pepper to make the pickles. The container is waiting for dinner tonight. I think they'll taste pretty good. I'll eat them with rice.

Additionally, I made daikon and potato miso soup. I like all kinds of miso soup, but I think daikon miso soup is my favourite. It's also really good with rice.

The leaves and stalks are so tasty, too. I never want to see the market throw the leafy parts away!

I enjoyed the daikon dishes with the main dish. Small side dishes, such as pickles and soup, are so important to my meals.

IMG_5670.jpeg

IMG_5673.jpeg

IMG_5674.jpeg

IMG_5675.jpeg

IMG_5672.jpeg

IMG_5671.jpeg

IMG_5676.jpeg

IMG_5677.jpeg

Here finding daikon it's really hard but I totally love this radish especially in soups when I found it I always buy it 😀

I know... It's not easy to find daikon. I also feel very lucky whenever I find it at a local store.

My husband loves daikon but I hear it's very difficult to grow. Yours looks so plump and straight, great work!!

Yeah, it's difficult to grow them bigger and juicier. I hope your husband finds some delicious daikon somewhere near your place. Talking about daikon is making me hungry again! 😋

I see it in the grocery stores here for $3 each. I've never tried growing it. I wonder how well it would do in a deep container with potting soil.

Daikon is pretty reasonable, and it contains a lot of nutrients! I've never tried growing it in a planter, but I think some people grow it in containers on their balconies or somewhere convenient.
