I’ve mentioned this in one of my previous post as one of my favorite foods — it’s called Ubod. I’m not sure if you’ve ever tried it or even seen it in the market. Here in our place, particularly at Hilongos Market, it’s usually available every afternoon. Most vendors sell it only during this time; in the mornings, you’ll rarely see it on display, and if you do, it’s only once in a while.
By around four in the afternoon, you’ll already see plenty of vendors displaying this at the market. Most of the time when we buy it, it’s still warm and freshly made. The vendors use a glass as their measuring cup. Each serving costs ₱15.
Ubod is the tender inner core of a young bamboo shoot. It’s soft, pale in color, and has a delicate, crisp texture. Because it hasn’t fully matured, it doesn’t have the tough fibers of older bamboo, making it perfect for cooking or making fresh spring rolls and other dishes.
Since we live quite far from Hilongos proper and need to spend ₱54 for a round-trip fare, we decided to just buy ₱100 worth of it and store it in the fridge. Both my mom and I love this food.
On the second day of my vacation, I was the one who cooked the ubod. It’s actually very easy to prepare, in fact, it’s already pre-cooked, so you don’t need to cook it for long.
So I just prepared some onions and garlic, slicing them into small pieces. I sautéed them until they softened and released their aroma, then added the ubod. After that, I seasoned it with soy sauce and a bit of oyster sauce. After about two minutes, I turned off the heat and it was ready to serve.
That’s really how quick it is to cook. It doesn’t require a long cooking time at all.
After cooking, my mom and I enjoyed it together. And as always — it was absolutely delicious. I’m not sure if you’ve ever tried this food before, but if you have, do you love it as much as I do?
Some people cook it with pork or fried fish, but in our case, my mom and I keep it simple without any meat and it still tastes just as good. How about you? Have you tried it before, and did you like it?
