Hi friends, I welcome you all to a beautiful 2026. I hope the year is treating you nicely already in good health. The holiday has just ended, but the beautiful memories still linger and can't be easily forgotten. The holiday gives us reasons to prepare something different from the regular. Grilling fish and making a special plantain sauce with oilbean is a special delicacy that I made for my family over catching up jists. The meal is simple but high in proteins a d delicious. The oilbean gave it an extra cruchy texture that we enjoyed along with the roasted plantains. This meal is certainly not to be forgotten anytime soon.

Ingredients
• 1 large fish
• 200g fresh peppers
• 5pcs fresh tomatoes
• 1 seasoning cube
• 4 onions bulb
• 4 cooking spoon palm oil
• half tablespoon curry
• 500g oilbean (ugba)
• 2 tablespoons salt
• 1 bunch of plantain

Cooking Procedure
Step 1
Wash the fish clean with salt, open up the side of the belly and remove the intestines. Rince well and spice the fish with salt and curry.

Step 2
Get the plantains cleaned, skin removed and place in a rack to be grilled. I grilled for 1 hour to get it crips as I wanted.

Step 3
Time to prepare the sauce. Place a put on fire, palm oil, onions and then chopped tomatoes and pepper after the onion is fried.


Stuff some of the sauce into the fish so it's very tasty.
Step 4
Add all the spices into the sauce and wash the oilbean and add into the sauce.

Taste and adjust spices where necessary. The whole family loved the meal. It's simple yet special because it's not a regular meal in most average homes.




The fish was grilled in the oven for 40 minutes on medium heat while the plantain was done using the microwave.
