Holla friends! I hope I find you well today. I want to share with you a delicious chicken stew I love. It's a rice, tomato stew, and chicken combo. It is very delicious and enjoyed better when the chicken is fried or grilled, like in my case, before adding into the stew. I also used a number of flavors to get my desired taste. The meal was enjoyed by all and highly nutritious too.
Ingredients
▪︎ 700g rice
▪︎ 1kg chicken
▪︎ 1 satchet tomato
▪︎ 2 onions
▪︎ 300g tomato mix
▪︎ 4 seasoning cubes
▪︎ 1 tablespoon garlic and ginger
▪︎ 2 cooking spoon palm oil
▪︎ 3 tablespoon salt
▪︎ I teaspoon rosemary
▪︎ 1 teaspoon curry
COOKING PROCEDURE
STEP 1
I started with the chicken. I washed with salt and seasoned well before cooking.
I added my chopped onions and spices and cooked for 15 minutes and then transferred to the microwave to grill for 60 minutes.
STEP 2
Now, get pot for the stew. Place on fire and add palm oil, add onions when hot and the satchet tomato paste. After 3 minutes, add tomato mix and fry well.
Add spices, seasoning cubes, curry, rosemary, ginger and garlic
STEP 3
While stew is frying, wash rice and precook to remove excess starch. Now get a bigger pot after precooking rice and fill 5 cups of water and 2 tablespoons of salt. Cook until rice is well cooked. You can drain out excess water or allow to dry out.
STEP 4
Now remove chicken from microwave and add to the stew, stir and taste to adjust spices. Cook for 3 more minutes, and it is ready to be served and enjoyed.
The meal is ready, and I grill my chicken using my microwave. Grill time was 1 hour. What a perfect combination of rice, stew, and grilled chicken. The end result was amazing because the meal turned out better than expected.
