I had four chicken thighs. Running out of idea what to cook, I asked the boys and the eldest gladly said roasted chicken with mashed potatoes! They loved my mashed potatoes, saying it was the best. Let's cook! I would not document the mashed potatoes here in this blog as I had done it before, mine was super easy, basically boiled the potatoes till soft, add butter, salt and pepper and mashed then. The secret was a lot of butter used.
Juicy Air Fried Chicken Thigh
Cooking only four chicken thighs, I decided to use my air fryer for a fast easy cook and clean.
Ingredients
I marinated it the Chinese way (maybe fused with some Western, I don't know), using diced garlic and onion, soy sauce, Worchester sauce, salt pepper and drizzle of honey.
Steps
Basically, it was fairly simple, just added all the above ingredients to the chicken thighs, mixed them up so that all parts were coated and marinated the chicken thighs in ziplock bag for 3 hours (or more if possible). It was a last minute decision to cook this so I didn't get to marinate it overnight which will yield better result.
Then, put them to air fryer, single layer, skin down first, for 190°C (385 Fahrenheit) for about 10-12 minutes, then flipped them over skin up for another 10 minutes.

For the mashed potatoes, I decided to heated up a bit more with one slice of cheese on top for that cheesy taste.
Lunch was served!
A super juicy chicken thighs with cheesy mashed potatoes, the boys were happy because this was something different from the past days' meals.
