My lunchbox contains a nutritious lunch: a whole wheat sandwich with chicken salad dressed with a little salt and mayonnaise. I also included yogurt with peach jam and some vanilla cookies. Some fiber, protein, and carbohydrates—a delicious and light lunchbox to enjoy. I hope you like it.
Ingredients
- 4 slices of whole wheat bread
- 120 grams of chicken breast
- 1 potato weighing 116 grams
- 1 carrot weighing 100 grams
- 2 tablespoons of mayonnaise
- Salt to taste
- 1 peach yogurt (140 g)
- 4 vanilla cookies filled with cream
- 1 square lunch box
- 1 small container for the cookies
- 1 lunch box

Preparation
1.- Place the chicken breast in a pot with enough water to cover it and boil with salt to taste. When it is ready, remove it from the heat, let it cool to room temperature, and then shred it. Set aside.

2.- Heat water in a pot. Peel the potatoes, wash them, cut them into cubes, and cook them until tender. Remove from heat, strain, and let cool to room temperature. We reserve.

3.-. Repeat the above procedure with the carrot. Set aside.

4.- Prepare the salad. Add the carrots, potatoes, salt to taste, and two tablespoons of mayonnaise to the shredded chicken. Mix well to combine the ingredients.

5.- Toast the bread slightly on a griddle. Then, prepare the sandwiches by placing a layer of chicken salad on one slice and immediately closing them with another slice.

6.- The lunchbox is almost ready, all that's left is to close the container and add the yogurt and cookies.

This is how the lunchbox turned out: everything was delicious, nutritious, light, and healthy.
