My main idea was to make them with chicken, but between one thing and another I couldn't buy any, so I used smoked pork chops instead. In this very simple recipe, I hardly had to cook anything, just the pork chops and a few cloves of garlic, which I used as a seasoning instead of a sauce or sour cream. I also used fresh ingredients such as tomatoes, green peppers, and grated carrots. This burrito may be a far cry from the traditional ones, but I enjoyed experimenting in the kitchen.
Ingredients
- 1 smoked pork chop, 130 g
- 78 g carrots
- 50 g tomatoes
- 40 g green peppers
- 7 cloves of garlic
- 2 tablespoon extra virgin olive oil
- 3 thin wheat tortillas (27 g each)
- Salt to taste


Preparation
1.- Cook the pork chop in a frying pan with half a cup of water. Allow the water to evaporate and when the chop is golden brown, turn off the heat. Once it has cooled slightly, cut it into small pieces. Set aside. As the chop is smoked, it does not need salt.


2.- Wash the tomato, remove the seeds, and cut it into small cubes. Wash the green pepper, remove the seeds, and cut it into very thin strips. Pour everything into a bowl. Set aside.



3.-. Peel the carrot, wash it, and grate it using the finest side of the grater.


4.-. Prepare the garlic dressing. Peel the garlic cloves and brown them in a frying pan with a tablespoon of olive oil.

5.-. Crush the garlic, add olive oil and salt to taste. Mix well to blend the flavors.

6.-. We assemble the burritos. We place the pieces of pork chop on the tortilla, then the tomatoes, green pepper, grated carrot, and garlic dressing.

Roll carefully and serve. I served this dish with hard-boiled eggs.
