Chicken Pastel and Chicken Tinola : Our meal while Typhoon Opong was raging

We did not finish the fried chicken we sold due to the heavy rain caused by Typhoon Opong. By the way, we run our own small business selling fried chicken. So, at ten p.m, no one was buying chicken, my husband decided to take it home. There were 20 pieces, There are a lot left; if they were sold for 25 pesos, the total would have been 500. ($8.61) I'm sad of course, but there's nothing I can do. I will still be grateful because we have dish that night, we can still eat it.
So, we ate the fried chicken for dinner, but we didn't eat finish them so my husband decided to cook Chicken Pastel the next morning. Actually sometimes there's left over from his sale but there aren't many left, maybe because of heavy rain, people are looking of a dish that a hot soup that's why what we sell is not exhausted.

I'll start teaching how we cooked the chicken pastel
There are two menus I write here but I'll start with the chicken pastel. Here we go:

After all the chicken are shredded, add pepper, salt, or any spices you like.

It's a good thing there's only a little left, because if theres a lot, shredding the chicken can be tiring on your hands.

Chop and sauté the onion and garlic. We use Margarine here instead of oil, but you can use either oil or margarine.

While the shredded chicken is being stir-fried, add a little water, half teaspoon of sugar,oyster sauce, and chili. But this is optional only if you want spicy or not, just wait for it to boil about 4-6 minutes.

That's it; our chicken pastel is done. It's simple to prepare because the chicken we used was already fried. But if the chicken used here is raw, you need to boil first then marinate it the whole night.

This is delicious served with red tomatoes, salted eggs, or boiled eggs over hot rice topped with soy sauce. Then a fried egg plant, It's Perfect combination! It also doesn't spoil quickly, even after a few days.

Please excuse to my haggard face and excuse to my chicken pastel platter; because we don't have many things here in our apartment. Because we just recently moved here.


Let's cook another dish, Chicken Tinola. This is also left over raw from our chicken business, so let's cook it.

Prepare first all the ingredients:

Chop the chicken into regular size or whatever a size you want and wash it well first.

Slice the ginger, onion, garlic and peel the vegetable pear and slice it.

Next, take the chili leaves. Just take them from their stems.

Since we have finished preparing everything we need for cooking, let's start cooking the chicken tinola.

Add oil to the pot, wait for it to hear up, and add the onion and garlic. Wait for it to turn brown, and then add the chicken, salt, ginger and Knorr cubes. Drain the chicken juices before adding the chayote, and add water, according to the amount of broth you want.

The chicken softened easily, I added the chayote. Wait for it to boil and taste, wait another 3-5 minutes then the tinola is ready to serve.

This is what we ate during Typhoon Opong. Although I am grateful that the typhoon did not hit here in our area, I am also sad for those who were experienced of the powerful winds cause by strong typhoon, whose homes were destroyed, deep floods occured, and love ones lost their lives. I feel sorry for them.
