Today we're going to make a cake that's ideal for people who are intolerant to refined flours and dairy. It's a fantastic recipe, very economical, super easy to make, and it's ready in just a few minutes.

I've tried it and was pleasantly surprised by the flavor and the fluffy texture of this cake. The combination of peanut butter and banana is always wonderful, and it also has very little sweetener, making this cake a pretty healthy recipe, ideal for breakfast because of the high protein content from the eggs.

  • Hoy vamos a preparar un bizcocho que es ideal para aquellas personas que son intolerantes a las harinas refinadas y a los lácteos, es una receta estupenda, muy económica, super fácil de hacer, y además esta lista en pocos minutos.
  • Yo la he probado y he quedado gratamente sorprendida por el sabor y la textura esponjosa de este bizcocho, la combinación de mantequilla de maní y banana siempre será estupenda, además casi no lleva endulzante, convirtiendo este bizcocho en una receta bastante saludable, ideal para desayunar por su alto valor de proteínas que encontramos en los huevos.

Ingredients:

-100 grams of unsweetened peanut butter, preferably natural.
-100 grams of peeled bananas (equivalent to two small bananas or one large banana).
-3 eggs.
-2 tablespoons of granulated panela (or any sweetener you have on hand).
-1 tablespoon of vanilla extract.
-1 teaspoon of baking powder.
-1/4 teaspoon of salt.
-mold: 1/2 liter capacity.

  • Ingredientes:

  • -100 gramos de mantequilla de maní, sin azúcar, preferiblemente natural.
  • -100 gramos de banana sin cascara, equivale a dos bananas pequeñas o a una grande.
  • -3 huevos.
  • -2 cucharadas de panela granulada, o el endulzante que tengas a la mano.
  • -1 cucharada de esencia de vainilla.
  • -1 cucharadita de polvo para hornear.
  • -1/4 cucharadita de sal.
  • -Molde: ½ litro de capacidad.

Let's get started:

Preheat the oven to 180 degrees Celsius.

Next, in a bowl, we will mash the bananas, making sure they are in small pieces, and add the 100 grams of peanut butter.

  • Luego en un recipiente vamos a triturar las bananas procurando que queden pequeños trocitos, añadimos los 100 gramos de mantequilla de maní.

We continue adding the other ingredients: the sweetener, the salt, and the three eggs.

Now we beat until all the ingredients are well combined.

We pour it into a mold that we have previously floured; my mold has a capacity of half a liter and the cake turned out perfectly.

Optionally, you can decorate with banana slices and sprinkle some cinnamon sugar on top 👌

We bake it in the oven for approximately 20 to 25 minutes, always remember to do the test with the pastry toothpick, it should come out dry when you insert it into the cake.

  • Llevamos al horno por 20 a 25 minutos aproximadamente, recuerda siempre hacer la prueba con el palillo repostero, este debe salir seco cuando lo introduces en el bizcocho.

Once it's ready, take it out of the oven and it's important to let it cool completely at room temperature before cutting and enjoying it.

  • Al estar listo, lo sacas del horno y es importante dejarlo enfriar muy bien a temperatura ambiente antes de cortarlo y disfrutarlo.
