Cooking my son's all time favorite-Lumpia(spring roll)

Lumpia is son's favorite food. He always wanted to eat lumpia from breakfast to dinner.

When I learned that my son loves lumpia so much I decided to make my own lumpia at home. It's way better that the one that we can buy at the market like pork or chicken lumpia because I honestly don't like how it taste but my son still love them. Then I started making my homemade vegetable lumpia. My son is not a meat eater so I opted not to put ground pork.

So the other day I decided to buy the ingredients of my homemade vegetable lumpia.

I bought three medium size potatoes and one medium size carrot.
I forgot to take a picture of the main ingredients.

This time its easier for me to prepare the ingredients for my homemade lumpia since my aunt gave me a Multi-use peeler,slicer,cutter and chopper kitchen tools. Way easier to slice the two main ingredients of my homemade lumpia.
Before I had this kind of kitchen tools, it really takes time for me to slice the vegetables for my homemade lumpia. Now that I have this kind of kitchen tools now it will only takes a few minutes to prepare them.

Preparation

First I peeled the vegetable using a knife since I still try using the peeler from the kitchen tools that I have.

I use the smallest shredder and I started shredding the vegetables I guess it only takes around 10 mins to finish the three potatoes and one carrot.

Then I proceed to the other ingredients for the homemade lumpia which is the onions and garlic.This time I use my new other kitchen tools for cutting the onion and garlic into small pieces without using a knife.

I like using it especially for the onion so you won't have a teary eyed after cutting it. Since you just have to use the manual crusher.
I just cut the garlic and onions into half so it will fit on the crusher.
After cutting it I started crushing it by pulling the string. You decide how crushed your onions and garlic.

Cooking
After preparing the ingredients I started heating an small amount of oil on the pan. Then I added the onion and garlic then the cut potatoes and carrots.

I only added small pinch of salt,pepper,flavor seasoning mix and pork soup since I was cooking pork bones that time.

I mix the vegetables and simmer it for 2 minutes then it's all done.

I put it on a tray to drain the sauce and leave it for a couple of minutes to make it warm before the final procedure.

Rolling time
Finally on the final stage of preparing the lumpia.Rolling time.Since my daughter already seperated the lumpia wrapper one by one ahead of time ,it's ready to roll the lumpia.
I choose the smaller kind of lumpia wrapper so I only put I small scoop of vegetables on the lumpia wrapper then I started rolling it and sealed it with water. I rolled only 5 lumpia and cook it for my son's dinner. I finish rolling the the lumpia after we had our dinner that night.

Ending thoughts

As a mom who always want the best for the kids, I always wanted to prepare the best and nutritious food for them.

I have never tried lumpia before but The recipe is quite easy I'll also try your son's favourite dish sooner or later when I have time...😁

Lumpia is one of my favorite dishes, especially during special occasions, as we all know, we, Filipinos love lumpia so much and thank you for sharing the idea of having it as a usual vayand by using vegetables. A healthier and much delicious option. Enjoy your lumpia!☺︎♡
