Snake Gourd Egg Drops Soup

Wow, I have a huge supply of snake gourd from my garden. I've shared them with my neighbors. Still many left!

And, I've also frozen some snake gourd pieces in the freezer. Look these bounties of snake gourd.

This means I have a wide variety of snake gourd combinations in my kitchen. But I have a few favorites. One of them is soup.

On a particularly dry day, enjoying clear soup is a refreshing choice. Moreover, snake gourd has a refreshing flavor, just like cucumber!

With the soup menu, we can add our favorite ingredients, even adjusting them to what we have in our pantry. And most of them pair well with other everyday vegetables, like corn or peas if you have them.

This time, I'll be making clear soup with egg drops. I'll be adding tofu. You can use any protein that works well in soup, like chicken breast.




The Ingredients

  • 400 grams of Snake Gourd
  • 250 grams of tofu
  • 2 eggs
  • 2 large tomatoes
  • 5 cloves of shallots
  • 3 cloves of garlic
  • 1 liter of water
  • 1/2 teaspoon of pepper
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of sugar
  • 1/2 teaspoon of mushroom stock
  • 3 tablespoons of cooking oil



Cooking Instructions

Prepare the Snake Gourd first. First, cut it in half. Then, remove the seeds if there are any hard ones.

Once cut in half, cut them into pieces, but don't cut them too thinly, as they won't fall apart during cooking.

Then, soak the Snake Gourd pieces in salt water for a while while preparing the other ingredients.

Slice the shallots and garlic. Then, cut the tomatoes into large pieces.

Cube the tofu. Or cut it into triangles, depending on your preference.

Heat the vegetable oil. Then, add the sliced ​​shallots and garlic. Stir-fry thoroughly until fragrant.

When the sautéed onions are fragrant, add 1 liter of water. There's no need to bring the water to a boil.

Add the sliced ​​tofu and the snake gourd. Cook, covered, for 3-5 minutes.

When almost cooked, add the beaten egg. Stir quickly.

Just before serving, add the tomato slices and seasoning.

Serve Snake Gourd Egg Drop Soup while warm. It's truly comforting ♥️, just like other egg drop soup variants. With the added sensation of fresh and sweet snake gourd.
