
My new favourite kitchen tool
Is most definitely the Ninja Detect Power Pro Blender, although I admit that our brand new knife set comes close because I use them more often than the Ninja, which is still being used at least once a day, but some days even more when I use it for other things than smoothies as well.
Pico de gallo
This happens more often than I thought before hand because of the new favourite thing to eat as a topping on pita bread or tacos, or heck even without anything else on a toast. I'm talking about pico de gallo, which I only know from ordering in tacos and having the option to add guacamole and pico de gallo. When we order tacos, I always buy both because I believe it makes every taco so much better but I always disagree with the costs of (an often) tiny little cup for 2 euros more or less (depending on where ordered). It's way overpriced and I often think that I should just make it myself.
The thing is that when ordering in tacos, it's not usually planned, because then I'd just make it myself, this is mostly the result of lack of time or energy and then I definitely don't want to be in the kitchen having to cut veggies or whatever on the side. To be fair, I would mind less with our new knife set which is way better than any knife I had in the past, lol. BUT still the Ninja beats me to it with the speed of making such a dish as pico de gallo.

The first attempt, you still see some tomatoes slightly too big, but I already perfectionized this in the next attempts.
Simple and delicious
Although I'm not a fan of tomatoes in general, there are certain ways that I will eat it but rarely do I find tomatoes REALLY delicious, that is until I made pico de gallo in this Ninja machine. Gosh, I never bought and ate as many tomatoes as I did in the past weeks, lol. Not even kidding!
I don't know if the original recipe contains more ingredients, I just copied what I always receive when ordering it:
- tomatoes
- onion
- parsley
- lime juice
That's it, and with that power tool I now use, I don't even need to cut it, I only cut off the top of the tomato and the onion outer layer and then in 2 or 4 parts, depending on the size of the onion and tomatoes.

Throw it in the big jar and press mode on the Ninja blender, then I use large chop or fine chop, depending on the size of the ingredients as well as how small I want the parts to be. I've noticed that sometimes it's better to pick large chop and sometimes small, otherwise it will be too wet in general because of very ripe tomatoes for example.
The Ninja blender does all the work, and I'm loving it! Afterwards I take out the (very very sharp) knife, rinse and clean it, immediately let it dry in a safe place where the kid doesn't accidentally let it fall or hurt herself otherwise and the jar is easily rinsed first with water and remains and then cleaned by hand. I'm super content with everything about this machine.
I jet have to dig into the recipe book that came with the blender, so far I only made my own smoothies and this Pico de Gallo dip. The dip is now something that I have in my fridge daily so I can quickly throw it on top of whatever we eat OR bake a pita bread for lunch in the air fryer and cut it in half to top it with this dip. It's so simple to make but I absolutely love it.
Quick lunch
I found a great butcher where they sell mixed packages with beef terriyaki and some veggies inside for a few euros. I always buy them, often (if I have time) cut the meat in smaller parts and then bake this, add some pita bread and pico de gallo, and we have a nice lunch which didn't even take too much time to prep.

I will probably have one of these pitas for lunch because I have some leftovers from yesterday :)
