[ESP/ENG] Pasta with zucchinis and king prawns

Hola a todos.

Estoy aquí de nuevo para compartir una nueva receta de pasta muy, muy sabrosa si les gustan las gambas grandes (ojo, no las gambas normales). Siempre uso pasta corta para este tipo de salsas, pero por supuesto pueden usar cualquier tipo de pasta (solo asegúrense de que sea pasta de trigo duro y no de huevo, así que nada de fettuccine o tagliatelle, como máximo espaguetis gruesos).

Me parece un plato muy bueno, y puede incluso volverse elegante si son buenos presentando el plato (yo no 😀), así que también es adecuado si tienen invitados. Es muy fácil y rápido, lo único un poco delicado es limpiar las gambas grandes.

Por favor, recuerden lavar muy bien los calabacines, tomates y las gambas antes de usarlos.

Hello everyone.

I’m here again to share a new recipe for a very, very tasty pasta if you like prawns (please note, not regular shrimp). I always use short pasta for this kind of sauce, but of course you can use any type of pasta (just make sure it’s always durum wheat pasta and not egg pasta, so no fettuccine or tagliatelle, at most thick spaghetti).

I find it a very good dish, and it can even become elegant if you’re good at plating (I’m not 😀), so it’s also suitable if you have guests. It’s still very easy and quick, the only more delicate part is cleaning the prawns.

Please remember, zucchini, tomatoes, and prawns must be washed very well before use.

Comencemos de inmediato con los ingredientes para 4 personas:

  • 8 tomates cherry

  • 2 calabacines verdes

  • 350 gramos de gambas grandes (frescas o descongeladas)

  • 320 gramos de pasta (yo siempre calculo 80 gramos por persona, pero depende de cuánto coman 😎)

  • un diente de ajo

  • aceite de oliva extra virgen sal gruesa, sal fina, pimienta negra (al gusto)

Empezamos limpiando los calabacines. Se pelan en sentido longitudinal como las cebras en la sabana, una franja sí y una franja no, preferiblemente sin pelar muy profundo, usando un pelador de patatas. Las tiras finas de piel se conservan.

Cuidado: aunque el pelador de patatas es una herramienta versátil que también sirve para pelar calabacines y otros vegetales, también pela dedos, como se nota por la tirita de mi sous chef 😈😅

Let’s start right away with the ingredients for 4 people:

  • 8 cherry tomatoes

  • 2 green zucchinis

  • 350 grams of prawns (fresh or thawed) 320 grams of pasta (I always calculate 80 grams per person, but it depends on how hungry you are 😎

  • one clove of garlic

  • extra virgin olive oil coarse salt, fine salt, black pepper (to taste)

We start with cleaning the zucchinis. They should be peeled lengthwise like zebras in the savannah, one stripe yes and one stripe no, preferably without peeling too deep, so use a potato peeler. Keep the thin strips of peel.

Be careful: although the potato peeler is a versatile tool that also works for peeling zucchinis and other vegetables, it also peels fingers, as you can see from the band-aid on my sous chef 😈😅

Los calabacines se deben cortar longitudinalmente en cuatro partes y luego en gajos de aproximadamente 1 centímetro cada uno, y reservarlos aparte.

The zucchinis should then be cut lengthwise into four parts and then into wedges about 1 centimeter each, and set aside.

Mientras tanto, preparen una sartén con dos o tres cucharadas de aceite de oliva extra virgen y sofrían el ajo (pueden sofreírlo con o sin piel — es decir, pelado o no — yo prefiero pelado). También pongan a hervir una olla con agua con un puñado de sal gruesa.

Yo uso poca sal en la cocina por la presión arterial, así que si les gusta la comida salada, usen un puñado apretado. Pero tengan cuidado, la salsa también estará salada. Así que controlen la cantidad de sal.

Meanwhile, prepare a pan with two or three tablespoons of extra virgin olive oil and sauté the garlic (you can sauté it with or without the skin — that is, peeled or not — I prefer it peeled). Also, put a pot of water to boil with a handful of coarse salt.

I use little salt in cooking because of my blood pressure, so if you like salty food, use a tight handful. But be careful, the sauce will also be salty. So, go easy on the salt.

Mientras tanto, corten los tomates cherry en cuatro gajos y guárdenlos junto con las pieles de calabacín. Cortar las pieles de calabacín longitudinalmente en dos o tres tiras más delgadas.

Meanwhile, cut the cherry tomatoes into four wedges and keep them together with the zucchini peels. Cut the zucchini peels lengthwise into two or three thinner strips.

Mientras el ajo empieza a freírse, pasen a limpiar las gambas grandes. Quiten la cabeza, la cola y luego las patas. En este punto pueden quitar el caparazón. Nosotros lo hacemos todo a mano.

Cuando la gamba esté limpia, córtenla con un cuchillo afilado longitudinalmente por la parte superior y quiten el intestino (esta es una de las razones por las que no como gambas en los restaurantes 🤬).

Lávenlas bajo el agua y quiten todo lo negro, por favor (también porque es amargo una vez cocido y nosotros queremos dulzura 😇).

While the garlic starts to fry, move on to cleaning the prawns. Remove the head, the tail, and then the legs. At this point, you can remove the shell. We do everything by hand.

Once the prawn is cleaned, cut it lengthwise on the top with a sharp knife and remove the intestine (this is one of the reasons why I don’t eat shrimp in restaurants 🤬).

Wash them under water and make sure to remove all the black parts, please (also because it tastes bitter when cooked and we want sweetness 😇).

Mientras empiezan a limpiar los langostinos, el ajo ya se ha dorado y el agua ha empezado a calentarse.

Entonces, agreguen las calabacines a la sartén y comiencen a dorarlas a fuego bajo (no deben freírse, deben cocinarse). Continúen limpiando los langostinos y después de 3-5 minutos agreguen los tomates cherry (remuevan de vez en cuando).

While you start cleaning the prawns, the garlic has browned and the water has started heating up.

Add the zucchinis to the pan and begin to sauté them over low heat (they shouldn’t fry, they should cook). Keep cleaning the prawns and after 3-5 minutes add the cherry tomatoes (stir occasionally).

Terminen de limpiar los langostinos mientras dejan que los tomates se marchiten un poco. Soltarán algo de agua que seguirá ablandando las calabacines.

Terminen de limpiar los langostinos y agréguelos a la sartén, suban el fuego y añadan un cucharón de agua salada hirviendo de la pasta. Mezclen y dejen cocinar por cinco minutos, hasta que el agua se haya reducido un poco.

Finish cleaning the prawns while letting the tomatoes soften a bit. They will release some water that will continue to soften the zucchinis.

Finish cleaning the prawns and add them to the pan, turn up the heat, and add a ladle of the pasta’s boiling salted water. Stir and let cook for five minutes until the water has slightly reduced.

Es hora de echar la pasta, en este caso les recomiendo cocinarla al dente (siempre que les guste al dente, si no, cocínenla un poco más, pero tengan cuidado porque luego tendrán que ponerla en la sartén con la salsa por un par de minutos).

Al final de la cocción, escúrranla, agréguenla a la salsa, vuelvan a encender el fuego bajo la sartén y mezclen todo a fuego vivo. Si sienten que es necesario, ajusten con sal fina.

It’s time to add the pasta. In this case, I recommend cooking it al dente (if you like it al dente, otherwise cook it a bit more, but be careful because you’ll have to put it back in the pan with the sauce for a couple of minutes).

At the end of cooking, drain it, add it to the sauce, turn the heat back on under the pan, and toss everything over high heat. If needed, adjust with fine salt.

Si les gusta, a nosotros sí, añadan una pizca de pimienta negra, ajusten el aceite a su gusto (yo no añado más) y mezclen todo bien antes de emplatar.

If you like, we do, add a sprinkle of black pepper, adjust the oil to your taste (I don’t add any more) and mix everything well before plating.

Ahora, ¿recuerdan las tiras de piel de calabacín? Pues córtenlas en tiras más finas (quizás ya lo había mencionado antes, si no lo hicieron, háganlo ahora) y cuando sirvan el plato, agréguenlas encima: no son solo para decorar, son frescas y crujientes, y le dan un toque final al plato.

Now, do you remember the strips of zucchini peel? Well, cut them into thinner strips (maybe I already said this before, if you haven’t done it yet, do it now) and when plating, add them on top of the dish: they’re not just for decoration, they’re fresh and crunchy, and they add a final touch to the dish.

¿Y Leyla? Bueno, Leyla ya se había escapado hace 45 minutos (se necesitan unos 40-50 minutos para preparar este plato si tienen que limpiar las gambas) con una gamba limpia, robada con un movimiento felino (poco atlético considerando su tamaño) pero rápido y certero.

La encontramos así en el salón, satisfecha y tirada como una foca al sol, en pleno sueño digestivo.

And Leyla? Well, Leyla had already escaped 45 minutes ago (it takes about 40-50 minutes to prepare this dish if you have to clean the prawns) with a cleaned prawn, stolen with a feline move (not very athletic given her size) but quick and sharp.

We found her like this in the living room, satisfied and sprawled like a seal in the sun, in a deep digestive nap.

Deve essere molto gustoso questo piatto ! Simile a quello che preparo io, ma più povero senza gamberetti e solo 2 pomodorini tipo ciliegino o datterino. Cuocio leggermente in padella con un pò d'olio evo le zucchine a quadrettini e i pomodorini, aggiungo la pasta cruda e acqua bollente man mano che viene assorbita dalla pasta, in pratica eseguo una pasta tirata come il risotto, in questo modo la pasta assorbe il sapore delle verdure! Facoltativo peperoncino o pepe nero. Dimenticavo... le zucchine appena raccolte nell'orto di un caro amico!
