Cake Rusk – A Crispy Tea Time Snack

How are you all? I hope you are doing well. Alhamdulillah I am also fine.
I am very careful about my diet. I always try to avoid foods that can cause weight gain. I like to eat healthy meals and control my daily calorie intake. However I love sweets very much. Desserts are my weakness. I enjoy eating custard, cake, gulab jamun, rasmalai, and many other sweet dishes. Because of this I sometimes prepare sweet treats at home. Today, I am sharing a simple and delicious Cake Rusk recipe with all of you.
Cake rusk is one of my favorite snacks. It is crispy, crunchy, and tastes amazing with a cup of hot tea. Dipping a cake rusk into tea makes it even more delicious. My family also enjoys eating it especially in the evening. The good thing about homemade cake rusk is that it is fresh and made with simple ingredients.

Ingredients

1 and a half cups all-purpose flour
3 eggs
Half cup oil
Half cup water
1 pinch food color
1 tablespoon baking powder
Half cup cornflour
1 cup sugar
1 teaspoon vanilla essence

Method

First, crack the eggs into a large bowl. Beat them well until they become light, fluffy, and creamy. This step is important because it helps make the cake soft. After that, add the sugar little by little and continue mixing.

Next, add the vanilla essence, oil, and water. Mix everything well until smooth.

Now add the dry ingredients. These include the all-purpose flour, cornflour, baking powder, and a pinch of food color. Gently mix everything with a spatula. Do not overmix the batter because it can affect the texture of the cake.

Grease a cake pan with a little oil so the cake does not stick. Pour the batter into the pan and spread it evenly. Preheat the oven before baking. Place the pan in the oven and bake at 180°C for about 30 minutes.

After 30 minutes, remove the cake from the oven and let it cool for a few minutes. Cut the cake into slices of your desired size. Arrange the slices on a baking tray and place them back in the oven. Bake for 20 minutes. Then take them out, turn them over, and bake for another 20 minutes. This second baking process makes the cake slices crispy and crunchy like traditional rusks.

When they become golden and crisp, remove them from the oven and let them cool completely. Your homemade cake rusks are now ready to enjoy.
I served these cake rusks with tea, and everyone in my family loved them. They were crunchy, flavorful, and perfect for tea time. If you like sweet and crispy snacks, I recommend trying this recipe.
